To Die For Fettuccini Alfredo

Reviewed: Dec. 21, 2009
I just eyeballed the amount of ingredients, which I would recommend. I don't like mine soaked in sauce, so I just add enough cream to make it work like about a fourth of a cup, and half the cheese too.

Pesto Pizza

Reviewed: Dec. 15, 2009
I made my own pizza crust, which is really so easy. I made my own pesto too with fresh basil, I'd give it a five star rating if you do that. I also added some thinly sliced cooked chicken breast strips.

East Carolina Barbeque Sauce

Reviewed: Dec. 7, 2009
I will give it three stars since I changed a couple of things. I put a can of tomato sauce in. I skipped the butter. I only used a fourth of a cup or less of cider vinegar.

Chicken with Herb Dumplings

Reviewed: Dec. 1, 2009
I didn't have baking mix, so used 2 cups of flour, 3 tablespoons butter, 1 teaspoon salt, 1 teaspoon baking powder, and 1 egg. Used milk and chicken broth until the right consistancy was achieved.

Oat Bran Muffins

If you substitute any whole wheat flour in the mix you may have to add more liquid. You can use a little milk, cream or orange juice. They look really pretty if you top with a few rolled oats and brown sugar.

Peanut Butter Dog Biscuits

Thumbs up on this. Had to sub out a few things to what was on hand. Used some wheat germ and flax meal. Both dogs loved it. I would suggest freezing little baggies of them, and use them as needed small bags at a time---for without preservatives they will most likely get stale or moldy I would imagine.

Rich and Creamy Tomato Basil Soup

Reviewed: Nov. 3, 2009
Wow, was this delicious! I had to make substitutions due to what I had in the house. I used v-8 juice and used canned diced tomatoes and put them in the blender. And I had to use some cream cheese and a teaspoon of flour to thicken-but I loved it!

To save time, I pre cooked the rice in the chicken broth--Then just heated shortly in the oven.

Lucky and Rippy's Favorite Dog Food

Reviewed: Oct. 11, 2009
After having my dog break out in a rash from corn allergy, but trying to save money on the food. Did my first run of it. Comes down to about a dollar a day to feed both my dogs. ( 70 pound and 15 pound) I read it was recommended to feed 1 cup per 35 pounds body weight, if that helps anyone. I plan on rotating chicken and fish. For the fish I used tilapia, can tuna, pack of salmon. I did about a little under half meat then the other half was white and brown rice, potato, eggs scrambled in olive oil, carrot, and brocolli. They absolutely loved it. And I feel so much better feeding them quality food instead of spending 15 dollars on a cheap bag of dog food that's practically all corn, what a rip off.

Mediterranean Medley Salad

Reviewed: Jun. 8, 2009
I would say a little too much going on for me personally. I wanted a cold rice side dish to go with Italian sandwiches. I left out the tuna and some of vegetables, and went more with multi colored peppers, onion, basil, corn, blk olives and tomatoes. I liked quite well.

Glazed Lemon Bundt Cake

Reviewed: Nov. 7, 2008
For more lemon flavor--totally skip the milk and substitute with a cup of lemon juice. For a prettier cake--instead of greasing and flouring, grease then use sugar. It works better than flour and makes the cake prettier than dry flour baked to the surface. Enjoy!

Spinach Quiche

Reviewed: Oct. 28, 2008
It turned out well. I am accustomed to a richer quiche flavor, but I wanted to try this recipe to go more on the healthy side. Next time I will compromise and substitute some of the cottage cheese for cream and I think I will enjoy it more. Also a little garlic and onion powder give some extra flavor.

Red Enchilada Sauce

Reviewed: Aug. 16, 2008
OMG!!! Just wonderful. I had no idea how to make Enchilada Sauce. When I saw how inexpensive and easy this recipe was, I had my doubts. But it was better than any store bought product we have ever bought. So fresh, and with no added preservatives or fillers. We could hardly wait 3 days to have it again!

Rice and Chicken Casserole

Reviewed: Jul. 25, 2008
I think I am going to try it with minced dried onions instead of the soup mix--since many people didn't care for strong taste...and it's so much cheaper and healthier than those salty packages. I am also going to use some white wine and water instead of the milk.

Turned out great. Used pinenuts-never tried the walnuts before, might give it a try next time. Didn't have fresh basil. Probably used around a fourth of a cup of dried basil.

Amazing Cocktail Sauce

Reviewed: May 7, 2008
Forgot to pick up cocktail sauce for a party, so in a panic found this recipe. It's just as good if not better than the jar. Only thing I changed after tasting it, was to add a sprinkle of garlic powder. Also I didn't have chili sauce so I just added some chili powder to the catsup and tasted great.

Green Onion Dip II

Reviewed: May 2, 2008
I changed it quite bit, but it came out so delicious, I thought I'd share. Used a 16 oz sour cream, and about 8 ounces of activa yogurt. Chopped the green onions in a food processor, so they were very fine. Added a couple teaspoons of salt, onion powder, garlic powder, and just a hint of dill, maybe 1/2 teaspoon. Wonderful flavor
