Carrot Cookies
I need to eat more carrots for dietary reasons so i tried this recipe and have mixed feelings about it. The base recipe is mediocre, however with some very helpful modifications as offered by other reviewers and a few of my own, it's perfect for what I wanted. It's lightly sweet. Here's my changes: 3/4 cup of butter (instead of shortening) 1/4 cup of vegetable oil (instead of shortening) 2/3 cup of carrot pulp from the juicer (instead of grated carrots) 2/3 cup of apple pulp from the juicer (instead of grated carrots) 1 cup of quick cooking oats 1 1/4 cup of sugar (instead of just 3/4 cup) The apples add a nice sweetness to it so you don't need a full 1.5 cups of sugar. I don't really like shortening, and much prefer butter, but a full 2 sticks of butter made it way too buttery. There is also only a hint of carrot. If you want the carrot flavor to be stronger, replace the apple pulp with carrot pulp.

Campbell's Kitchen Vegetable Lasagna
this turned out really well after i slightly modified the recipe to my own liking. instead of using the prego sauce i made my own from diced tomatoes, brown sugar, oregano, tomato paste, salt, pepper, onions and garlic. i also added chopped spinach (defrosted). i made it along with a meat lasagna for a bunch of meat loving friends. and everyone thought they were both exceptional!
