I'm currently 29, married, with one son. My son is 4. We are vegetarian. We tried vegan a few years back, but cheese is just so delicious...I am a stay at home mom, sometimes a flight attendant. I love to travel. I love to cook. I enjoy making vegetarian dishes and really love to try and create old time favourites in a vegan or vegetarian variety. I'm also trying to get into baking. I love sewing.
My favorite things to cook
I love to make vegan or vegetarian versions of family favourites. I have a great recipe that I created for my un-beef stroganoff...And my vegan sloppy joes are the BEST. I haven't shared the recipes on here yet...but maybe I will soon.
My favorite family cooking traditions
I love that I'll ask my husband to make dinner and then I end up taking over...his idea of a great meal is cooked plain rice with hot sauce. :)
My cooking triumphs
Back when I was still a meat eater, I made a beef tenderloin for my uncle and grandfather with a roasted garlic and horseradish crust (recipe is on here somewhere) that was so amazing, my grandfather bragged about it to his friends until the day he died, literally! Love you Gramps! I also have baked the most delicious vegan cakes.
My cooking tragedies
I once made a most wonderful squash pie...similar to pumpkin pie, but with other fall squash. Well, we were all so excited to dig into the delicious dessert, and as we bit down, I recalled that I didn't add the sugar...needless to say, it wasn't the best dessert pie...

Hot Cocoa Marshmallow Cupcakes
I used actual hot cocoa mix packets in the marshmallow, and piped in a small amount of chocolate pudding into the top of the baked cupcake. These were fantastic! Served them at a bonfire. Everyone loved them!

Turtle Cake I
This is a delicious cake. I used the german choc. cake mix and had to use my bundt pan. It turned out great. I did use less caramels(probably about 9 oz), 1/8 cup butter, 1/2 cup evaporated milk on my stove top for the caramel sauce. turned out great. drizzled chocolate glaze on top followed by some of the caramel sauce. Very yummy! definitely agree with other reviewers, trim the cake down after the first baking before adding the caramel. And by using a little less of the caramel, I had a very pretty bundt cake that stayed together beautifully! Definitely try this if you like caramel. Oh, I also did not use any nuts or chocolate. I used peanut-butter chips and chocolate chips to make the glaze for the top. sprinkled mini chips on top. I'll post a photo soon.

Yummy Lemon Salmon Burgers
I made these with a few substitutions: 2-6oz cans of salmon, fresh basil instead of parsley, added a teaspoon of minced garlic, and some black pepper. I didn't make the sauce. These were delicious! Even my 4 year old enjoyed his mini salmon burger! I served them on salad for my husband and myself with no sauce needed on the burgers. They were moist and flavourful without the addition of any sauce. Will definitely make again!
