I am a single mother and I work late hours so I like to cook all weekend meal that I can reheat all week long. Come over to my house any given saturday and every pot and pan is dirty but I will have hot lunches and dinners all week long!!!!!!!!!!!! Chicken, vegatarian and fish meals, I do not like pork or beef so if I can substitute in a recipe I do. My family is Mexican on my mothers side and Italian on my fathers so we have a very rich food history. I have some old family recipes that sorry I can not share here...or I will have to kill you (LOL). My tamales are to die for... romantic chicken and artichokes from this site. Tamales sorry no can share that recipe. onion pie From this site I really have not had to many of these that stick out (spices can save anything or just cover it with hot sauce) unless you count that time my sister and I made tapioca when we where little and thought that the box was misprinted. Instead of 2 tablespoons we added almost a whole cup...was like that tv show where the soap bubbles come out of the washer machine!!!!!!!!!!!!
