Strawberry Whip

Simple, creamy, satisfying recipe I found while looking for a way to use up some whipped topping and strawberries. I let my gelatin get too firm (all the way set, actually) but this still worked: lots of mixing with a fork broke the gelatin up into "crumbles", and then stirring in the topping I had an almost marbled white-green effect. Oh yes, as I was making this last-minute from the pantry I used the lime jello I had on hand; yummy strawberry-lime flavor that would have been good with crushed pretzels on top and a nip of tequila in the gelatin to make it "margarita". Next time, I suppose :) Thanks for sharing!

Fluffy Pancakes

Fantastic. I'm not a pancake expert but these were the lightest and fluffiest I've ever made at home. I also don't consume buttermilk on a regular basis and have a problem buying a carton just to use in one recipe with the rest going to waste, so I love the vinegar-soured milk in this one. This site has given me beer pancakes for when I don't have milk and this recipe for when I do: thanks so much for sharing!

Strawberry Peach Cups

This was the perfect fruit dish for a casual lunch with friends. I used canned pineapple chunks with fresh strawberries as my peaches must have walked out of the pantry, they are good together. I too needed to add sugar (powdered so it would dissolve) to the topping: must have been between half and three-quarter cup added to the recipe doubled, but using a whole 8oz brick of cream cheese. I understand I did increase the cheese by 2oz but I added extra whipped topping too, and without the sugar it was just too orangy-tart. With the added sugar I will definitely make this again, thanks so much for sharing.

Beer Pancakes

So glad I found this recipe! It's pretty common for me to not have milk in the house, so I really appreciate the lack of it in here. I will continue to make these even if I have some though, as I really loved the sweet slightly yeast-y flavor. They cooked up a great texture, light but not airy like the powdered mix, which is a good thing. I will need to try with diet cream soda and fresh raspberries sprinkled in, but as written this recipe is wonderful. Thanks for sharing.

Sweet Potato-Cashew Bake

I made this when my mom requested I bring a sweet potato dish to Thanksgiving, and it turned out to be my favorite thing on the table. I searched for hours until I decided on this recipe: I wanted one with recognizable pieces of sweet potato instead of a mash, some sweetness but not syrupy, and a marshmallow topping. I have never made sweet potatoes any other way than roasting plain with oil and salt but following this recipe gave me EXACTLY the dish I was looking for. I used pecans instead of cashews for preference, that was my only change. Everyone at dinner enjoyed them, I hoarded the few leftovers and those are delicious reheated too. Cara I really appreciate you sharing this recipe, this is now my ultimate sweet potato casserole and I was so proud to bring this to Thanksgiving, thanks so much!

Black Bean and Corn Salad

Delicious just as written, but this is such a great base to experiment with. I did find that bottled citrus juice, while fine in my cocktails, gives the dressing a very overpowering flavor. Using fresh (I prefer lime) tastes much better. Thanks so much for sharing.

Five Minute Ice Cream

Amazing. From all the positive reviews I knew this would work, but wow it's got an amazing creamy texture that's out of this world. I subbed unsweetened frozen raspberries, delicious. I think the listed proportions of ingredients are ideal, I added vanilla extract for preference but that's really not needed. I think there are closer to two, maybe three servings. This seems like an awesome recipe to make with kids. I will absolutely make this again, thanks so much for sharing!

Chicken Rotini Stovetop Casserole

This was a good quick weeknight meal. I too didn't use four pans: one to boil the pasta, and one for everything else (chicken/veggies, then sauce ingredients, then mix everything together in it to serve). The sauce was pretty good but for using so much butter/cream/cheese it wasn't very rich tasting: definitely not an alfredo flavor, and not something I would spend so much in ingredients/calories on. In the future I would probably sub broth and a can of cream soup, or broth and some cream cheese. Definitely add more peppers/veggies. I only used 3 breasts with the written amount of pasta/sauce, and added 2 whole peppers right off the bat, and still thought there were too few. A nice dinner, thanks for sharing.

Fried Corn with Bacon

Yummy. I did not allow the bacon to become fully crisp (in a hurry, and another recipe I was looking at specified NOT to crisp the bacon) but my hubby and I both remarked it would have been better with crisp-crumbled bacon like the recipe specifies. I added a healthy sprinkle of seasoned salt and pepper blend, but that's what I put in most everything I make. I do think this needs some chopped onions too. Thanks so much for sharing.

Apple Brickle Dip

Fantastic. I only followed the dip portion, we all just sliced up Gala and Honeycrisp apples fresh to dip in whenever we wanted some. I think toffee bits with chocolate would be too much: as written this is quite sweet and chocolate would overwhelm the creamy toffee-ness. In the future I will try this with 1/4c brown, 1/8c white sugar but I don't like the really sweet stuff: this dip as written is delicious. Thanks so much for sharing.

Easy Cheesy Skillet Chicken

Yummy chicken, really good gravy. I usually try and add my veggies into a meal like this but served with roasted potatoes and steamed broccoli we could top everything with the delicious sauce. I did take a shortcut and use a can of cream of cheddar soup instead of the mushroom, then omitted the cheese. I also peppered this with black and cayenne to make a spicy dish, but that's our preference. I will definitely make this quick dinner again, thanks so much for sharing.

True Blue Custard Crunch Pie

This was an awesome pie. It's a lot quicker to get in the oven than a traditional blueberry pie and only dirties a mixing bowl, so I doubt I'll even go the boil-with-cornstarch route anymore. It's so creamy and refreshing with the dairy, and the fresh blueberry taste comes through perfectly. I'll probably try with other fruit too. For my preference I'll use brown sugar in the topping but that's all I would change, thank you so much for sharing.

Apple Squares

These turned out so delicious! I made with the written amounts of sugars and these were very sweet. Personally I will cut each down to 1/4c in the future but that's a matter of preference; as written these are still yummy. I also used two chopped Gala apples, which came out to at least a cup and a half. This made a very fruity moist bar, which we loved. I would use half a cup if I needed a bar that was more resilient, with all the apple I used you couldn't really pick one up and munch it. The batter is stiff, I plopped it into the pan and had to use my fingers to spread it out. I look forward to making these all fall, thanks so much for sharing!

Extreme Banana Nut Bread 'EBNB'

Wonderful. I had let two bananas get way too ripe, which was the perfect amount for one loaf. I halved the recipe and everything turned out great, using about 1/4c brown and 3/4c white sugar. Thanks for sharing :)

Beef and Pasta

A perfect recipe for my quest to use up leftovers. My ground beef was cooked taco meat. I did add the Worchestershire sauce to those flavors and probably won't in the future, it gave the dish a chili-like flavor I wasn't looking for. I used a 14oz can of tomatoes, half a box of beef broth (approx. 14oz, I think...) and added extra fresh tomatoes, green pepper and a medium zucchini I had on hand. This was fast, flavorful and so much healthier/economical than eating out, thanks so much Campbell's!

Pork Chops O'Brien

Delicious, a really unique way to cook pork chops. The cheese and celery soup give the potatoes a nice flavor, in the future I will probably add some pepper to round it out. The chops were nice and tender under the cheese, those too I will season for our tastes in the future. I did use 2 cups cheese total but that was with reduced fat cheese, if you use full-fat I bet the 1c as written would be fine. Thanks so much for sharing.

Ground Beef Curly Noodle

Such a quick, flexible meal. I love recipes I can plug whatever is on hand into, and that's just what I did. I used a pound of leftover cooked brats and doubled the noodles, adding a can of chicken broth and thus draining the corn. I also added a medium zucchini I had in the fridge. I skipped the ramen seasoning pack and added a lot of crushed red pepper. I had never thought of using ramen noodles for the "pasta" in a dish, thanks so much for sharing.

Macaroni and Cheese with Ground Beef, Salsa and Green Chiles

I've made the Creamy Macaroni and Cheese several times, it's my favorite. This is the first time I've doctored it up at all and thought it was very good. I did use a full 16oz jar salsa but I was using leftover cooked ground beef and added a 16oz bag of frozen green beans. I must say, mac and cheese is a great rich cheesy side but I think it may be a little much for a full meal. My husband loved it, thanks so much for sharing.

Green Beans with Cherry Tomatoes

Very good. I had really fresh green beans so I made sure to use fresh tomatoes and basil too (usually I would have used canned/dried), it was perfect. I did use 3tbsp butter and 1 tbsp olive oil with good results. Thanks very much for sharing.
