Easy Cream of Asparagus Soup
Thank you for a nice easy recipe. In an attempt to reduce the salt and the fat, I made some changes. I used unsalted butter, low salt chicken stock, and low fat buttermilk instead of cream. I will make this again.

Pasta Melanzana
We enjoyed this with fresh eggplant from the farmer's market. To lighten it up a bit I used 1/2 the amount of cheese called for in the recipe.

Al's Sufferin' Succotash
Succotash is a favorite of mine. I make it using the cream and butter combination as suggested. Just before serving, stir in a pinch (just a pinch)of fresh ground nutmeg. That's the way my granmother made it.
