About this Cook
I'm a single mother of 3 very picky boys. If one kid loves it, another will just like it, and one will always not like it. My youngest is the least picky, and his tastes are changing every day, he's becoming more open to different foods. My middle child is the most picky and it's very hard to please him. My oldest is somewhat picky, but will eat whatever if that's all he's going to get ;) They really drive me crazy sometimes and dinner time is always a dilemma at our house.
My favorite things to cook
I love Mexican food, but, unfortunately, my kids don't like it too well. I love to make Enchiladas, different kinds of Tacos, Green Chile, Frijoles, Spanish Rice, Chicken Taquitos, Tostadas, Chicken Quesadillas, Burritos, Nachos... Gee, I'm getting reeeeealy hungry!
My favorite family cooking traditions
Every time I make Chicken Taquitos and Rice, I think of my aunt teaching me how to make them in her kitchen several years ago. She died in 2005 and that is a fond memory I have and her food will live on!

Any time my kids don't complain! :)

Chicken Tetrazzini IV
We all loved this! It was absolutely delicious! I added more chicken broth as suggested, and used half and half. When my kids ALL agree that something is delicious, it is a great accomplishment for me. Thank you so much for sharing your recipe :)

Chicken Quesadillas and Fiesta Rice
Sorry but I didn't enjoy this at all, and neither did the kids. I think I will stick to my original chicken Quesadilla recipe.

Nacho Chip Casserole
I made this using the suggestion of adding taco seasoning to the meat while cooking (1/2 packet), and equal parts of shredded cheddar and mozzarella (needed to get rid of the mozzarella because it was getting old) and I thought it was really good and quick. I also added a little chile powder (about 1/2 tsp), medium hot (Chimasa Brand, pure new mexico chile powder). I think that made it a little spicy, but added a lot of flavor. My youngest son, who is the least picky, liked it, but my middle son who is extremely picky asked for something else. If it was just for me, I'd make this recipe regularly because it was simple, delicious, and quick, but since we don't all agree on it (which is very common, unfortunately :( I will probably only make when my youngest son and I are the only ones eating. Thanks for sharing your recipe.
