To Die For Blueberry Muffins

Best muffins I have ever had. The topping is the best part. I got 12 normal sized muffins out of the mix and made a batch each of blueberry and strawberry. I used brown sugar for the topping but ended up with a paste instead of a crumble so I slowwly added white sugar and got a crumble consistancy. THis is the only recipe that I will use now.

Best Lemonade Ever

Really smooth and easy to make. I made it as per the recipe but increased it to serve 50. It was definetley a bit sweet for my taste so next time I will reduce the sugar. I got 3 1/4 cups of lemon jucie from 18 small lemons. I put them in the microwave for 10-20 seconds then rolled them before cutting and juicing them.

Kathy's Delicious Whole Slow Cooker Chicken

I have done this a couple of times now and both times it has been great. It is so tender and it is a gentle flavour. Doing it in the slow cooker takes the thought out of it. My husband thinks it is the best way to cook a whole chicken. I certainly won't do it any other way.

Ranch Burgers

I needed to get dinner ready quick so I used the ranch and as someone else suggested I used onion soup mix. I also added some BBQ sauce. I used a foreman gril to cook them for 5 minutes and they were perfectly cooked. They were nice and moist though I did not think the ranch flavour was very strong I do think it added to the over all taste.

Salsa Chicken Rice Casserole

Quite tasty. Good to try. I thought there would be too much sauce but it held together well on the plate. Nice texture. I did not have mild salsa so used hot, I think I would also try adding some veg next time, like corn or kidney beans, perhaps even green beans.

Romaine Rice Tuna Salad

This is a nice, quick to make dinner. I really like it and find it keeps well for the next day. I used less dressing the second time I made it and liked it better. My husband it not so keen on this one but that is down to personal taste. I have thought about using Green bell pepper finely diced instead of the lettuce but I haven't tried it yet.

Chicken Enchilada Casserole II

Quick easy and tasty. This is one that I have committed to memory. You can vary the level of spice by the type of salsa used and by how much of the sauce from the kidney beans you use. A winner everytime. Thanks for a great dish!

Never Enough Green Bean Casserole

Wonderful variation on this recipe. My husband is not very fond of GBC but he likes this one. I have not tried it with the bacon yet as I did not have any but even the adding of cheese made a big difference. I will not add the mushrooms as my husband does not like them. I will use this GBC again.

Scalloped Corn and Broccoli

Easy to make but my husband and I found it a bit too sweet for our taste. However I will keep it in my box as it would be good for someone who doesn't like veggies or children who are picky. There is not a strong veg taste at all.

BBQ Tuna Fritters

Tasty, easy to make. This is a great way to eat tuna if people are not keen on the tuna taste. I did add an extra can of tuna as I felt otherwise it was mostly breadcrumbs (which I used as I did not have the oatmeal stuff). A wonderful flavour and I will certainly be making this again. My husband liked it more than tuna casserole, which until now was almost the only way to get tuna into him. Thank you.

Orange Glazed Carrots

Not too bad. Easy enough to make but not as strong a flavour as I expected and I think next time I will try to thicken the glaze so that it is more glaze like. A nice change from normal carrots. I will keep trying with this one.

Lamb Chops with Balsamic Reduction

I made this for my husband's and my first Valentines dinner. It was terrific. Fairly simple and the aroma is mouth watering. I used Pork Chops instead of the lamb and a regular onion as I did not have any shallots. Also I might try it in the oven next time as I found that to get it medium-well made it a bit dry.

Soy Garlic Steak

My husband and I are not that fond of steak but we were given some and so tried this recipe. I am not very good at grilling or frying so I also cooked the steak in the oven (300F for 1 hour). I put the marinade in with the steak when I cook it to help keep it moist. As long as it is not over cooked it comes out tender and moist and we really enjoyed it. Any time we do have steak this is the recipe that we will use.

Goulash Supreme

My husband and I loved this recipe. It was quick and easy and though not a dinner party meal, one that could be used for buffet type meals. I did not add the tomato paste but instead of adding the stewed tomaotes I used a jar of pasta sauce. I did not have macaroni so I used penne pasta instead. I put it in raw though I was worried about it cooking in time. The pasta cooked fine and did not take long at all. I also reduced the amount of chillie powder to 1 tsp as I am not fond of spicy foods and I think next time I will add a bit more. Perfect meal.

Tomato Pork Chops II

I am not very good at grilling or frying foods but I love to eat pork chops as does my husband. This recipe was perfect as it aloud us to eat chops with out me burning them! It was so easy to make and my husband really enjoyed it. I found the meat a little bland but very enjoyable. I did not have a can of tomatoes so I used a jar of pasta sauce that I had as well as some oregano, basil, Mrs Dash and Paprika. I also added some garlic to the chops when they were being cooked on their own. My husband said I could make it anytime. The 2nd time I made this I added some Worcestershire sauce and it made all the difference - no bland taste to be found!

Easy Meatloaf

This was the best meatloaf I've ever had. I found it moist and sweet, but not too sweet. I had run out of milk so used some BBQ sauce and water instead. This was the first time I had made meatloaf so I think next time I would not add the water just the BBQ sauce. My husband found it a little sweet but still enjoyed it so i might reduce the sugar for him next time.
