Apple Hermits

Made this recipe today and it was very close to my family recipe. The only change that I made was adding one more egg and omitted the apples. In their place I added chopped dates in the amount of 1 cup. It was a bit dry so the extra egg fixed that. Turned out great.

This was very yummy. I did not add the sugar and I thought that it was sweet enough. Was very good with poached salmon and basmati rice. Perfect compliment.

Scrumptious Strawberry Shortcake

The dough was very dry and took a while before it came together. I baked it for twice the time called for and it turned out very nice. It did have a shortcake kind of texture. I sprinkled white sugar on top before it went in the oven and this gave it a nice little extra. It was better than I thought it would be. Very light and delicate. Went great with strawberries in their own juice.

Ham 'N' Cheese Quiche

Very nice flavor. I made a crust out of hash brown potatoes with a little melted butter to bind. Pre-baked crust at 400F for around 10 minutes, then added filling and cooked as in recipe.

I agree with the others. Reduce the sugar to just under 1/2 cup and it's perfect. I used whole milk as well for a creamier texture.

Lemongrass and Citrus Poached Salmon

Very tender,moist,light and flavourfull. It was the nicest salmon I've ever had. I cut the lemongrass in inch long pieces and crushed them to release their flavour and just picked it out at the end. I don't think I'll cook salmon any other way from now on. I just loved this recipe. So perfect with a basmati rice and roasted broccoli. YUMMMMMMMMMMY

Tomato and Basil Quiche

I soaked about 6 or 7 sun-dried tomatoes in boiled water for about 20 - 25 minutes, in place of the fresh tomatoes. Chopped them up and added the flour and basil (only 1 teaspoon of basil next time. Found the basil flavour a bit too strong) and sauteed them with the onions for a couple minutes. As well, I chopped up about 3/4 cup of broccoli to saute with the onions. I also replaced the Jack cheese with old cheddar, as I like a stronger cheese flavour. This was soooooooooo delicious. Extremely flavourful and tasty.

Broccoli Casserole

This was excellent. I made it for Easter supper and everybody loved it and wanted to have the recipe.I split the broccoli with cauliflower for something different. I also used fresh vegetables, instead of frozen, and reduced the egg to just one instead of two. I would make it over and over again. Really yummy.

Summer Potato Salad

Love it! Made it for a B-Day party for my sister and everyone thought that it was great. Extra zing. Better than just plain mayo for flavour. I only used half of the lemon juice. I'm going to make it again today, but I'm going to try it with lime juice instead. That's all I have. I'm sure it'll be great. Love it.
