I made this recipe exactly as it said, but doubled it and almost doubled the vanilla (I love a little extra vanilla in just about everything). The dough looked a little too runny, but it turned out great. Flatten a little, when you put the dough on the sheet and they won't be puffy. I think this is one of the best cookies I've ever tasted. If you don't like coconut, you will still love these, mine barely tasted like coconut, but had a wonderful texture and the smell was brilliant.

I first found this recipe about 5 or 6 years ago, and I have never used another biscuit recipe. Everyone loves them, so I try to make them at least once a week, for Sunday dinner. I usually make a double batch, and the kids wake up to them cooking in the morning. They are easy, and fast, but it looks like they took you all day to make. They are a part of our traditions.
