This was okay--tasted like chicken cacciatore, but didn't have the kind of flavor I was hoping for. Although, it is a very quick meal that is easy to prepare.

Italian Sausage Soup

This is a great soup! I usually double the recipe, and it turns out perfectly. It tastes even better the second day. Cooking it a day ahead is also an advantage for the health conscious, in that you can skim off the top layer of fat. But, this is one of our favorite soups, nothing is really necessary to improve it.

Pesto Cheesy Chicken Rolls

Pretty good, though the mozzarella cheese became a little too hard and rubbery. But, it was a very quick weeknight meal. Next time I would put the cheese on halfway through cooking instead of beforehand.

Creamy Chicken and Wild Rice Soup

Pretty good, tasted like a chicken noodle soup with a heavier texture. But it was a tad too salty for my tastes. Next time I would either cut back on the salt or use low sodium chicken broth.

Grandma Johnson's Scones

I have been meaning to make these scones for a while. I finally got to them this morning, and the flavor is excellent! Reminds me of a trip to Ireland, and all the yummy scones there! The only reason I am giving it 4 stars, though, is because they were kind of crumbly and wouldn't stay together after baked. I will definitely be making these, again, though.

Banana Banana Bread

The flavor was great--well what I was able to save of it. The outside was burnt while the middle was raw. Perhaps it is my oven or the size of loaf pan, but I will be trying this one again, because I was impressed with the flavor and look forward to homemade banana bread!

Caramel Popcorn

This would have been awesome if it hadn't burned so easily. That is one of the challenges with corn syrup. But, the next time I make this, I would probably do what another reviewer suggested and just let the caramel mixture dry onto the popcorn without baking it.

American Lasagna

Delicious! My husband said that this is something you would find at a restaurant. I added some crushed red pepper flakes and red wine to the meat sauce. I also used some plain tomato sauce to spread over the bottom of the pan to keep the noodles from drying out and doubled up the number of noodles per layer. This will be a favorite!

Chicken Enchiladas II

While we like our usual red sauce enchiladas better, this was a nice change of pace. This was a good recipe, although my only complaint was that the sauce filling was a little runny after they cooked. But, we did like them and will be making again.

Baked French Toast

This was pretty good, we enjoyed it and took reviewers advice to ensure that the middle was not soggy by using less liquid. But, I only used the corn syrup/sugar mixture on half the slices, and I am glad I did. The tops burned and the syrup became bitter. While the taste of the syrup was yummy, I would prefer just maple syrup. But, we will be making these again.

Bow Ties with Sausage, Tomatoes and Cream

This was a very good recipe. But, my sauce was not as thick as I would have liked. Next time (and there WILL be a next time!) I will probably use a can of pre-made Alfredo sauce in place of the heavy cream in the interest of a thick, creamy, easy sauce.

Slow Cooker Mashed Potatoes

I made these tonight to go with turkey and gravy, and they were my husband's favorite part of the meal. Very yummy, and a nice change from regular mashed potatoes. I will definitely be making these again.

Sesame Beef

This is definitely our favorite stir-fry recipe. I do modify it a little, though, as follows: 1. I use stir-fry beef instead of round steak. It comes out much more tender. 2. I double the marinade, but put half in a separate container. This will be the sauce for the stir-fry veggies. 3. First, I put on the beef with its marinade, and let it cook until done. Then, I remove the beef, and add stir fry veggies and pineapple with the other batch of marinade sauce. Once those are crisp tender, I add the meat back in to warm it up, as well as the sesame seeds, and serve over rice or noodles. It's one of my favorite things to eat!!!

Real Italian Calzones

Very good Italian meal. The dough made for a good crust, but I played around with the filling. I used 1/2 LB each sweet/spicy italian sausage, green and red peppers, mushrooms, mozzarella, romano, and parmesan cheeses. I also used 15 oz of ricotta which made extra filling that I will use for stuffed shells to make and freeze for another meal. Will definitely be making this again!

Grandmother's Buttermilk Cornbread

Exceptional!!! This went great with our chili tonight, and it is way, way better (and almost just as easy) as any of the boxed cornbreads. This will be our cornbread recipe from now on, thank you!
