Big Al's K.C. Bar-B-Q Sauce

Reviewed: Jun. 28, 2007
Yum! This was a wonderful sauce! I didn't have onion powder, but it still turned out delicious. After I cooked the sauce, I poured about half the sauce over half a dozen chicken breasts in the crock pot for 6 hours, then shredded the meat and returned it back to the crock pot for 2 hours to make some amazing chicken sandwiches!!!!!

Restaurant-Style Zuppa Toscana

Reviewed: Jun. 22, 2007
Great soup! Very easy to make too, start to finish took less than half an hour. I used hot italian sausage, red onion and spinach (what I had on hand) instead of smoked sausage, regular onion and kale, and it turned out superb! In addition, I used pre-cooked bacon which saved even more time. Even though I made it today for tomorrow night's dinner, I snuck myself a little bowl. By the way, 1 Quart water is equal to 4 C.

Red Skinned Potato Salad

Reviewed: Jun. 17, 2007
This was probably the best potato salad I have ever had! Delicious! It was a hit at our Father's Day BBQ. I used green onions instead of regular onions, and used bacon bits instead of real bacon (pressed for time.) Thank you for such an easy and fabulous recipe!

Coconut Shrimp I

Reviewed: Jun. 15, 2007
This is the first time I have made or had coconut shrimp, and it was pretty good. Surprisingly easy as well. I chilled the batter overnight, and that seemed to work well, it adhered to the shrimp perfectly. The breading was really good, but the shrimp itself was a little bland. I might try marinating the shrimp in something before breading it. It was still well liked, though.

Apple Dumplings I

Reviewed: May 31, 2007
These were awesome with a few simple adjustments: I reduced the amount of water, used half brown sugar and half white sugar, and coated the apples in the sauce before transferring to biscuit dough to ensure the apples would have a lot of flavor. Also, I had some leftovers from dessert last night, and heated them up in the microwave for 45 seconds to make a great breakfast this morning!

Yummy Honey Chicken Kabobs

This was not our favorite recipe, sorry. The flavor was a little bland, and had a harsh aftertaste.

Awesome Grilled Cheese Sandwiches

Reviewed: Apr. 24, 2007
I was so happy with how these turned out! I love grilled cheese sandwiches, but making them (especially if you're doing more than one) can be such a pain. These turned out so crispy and not greasy at all. I will be making my grilled cheese sandwiches this way from now on. Thank you!

Spinach Quiche

Reviewed: Apr. 18, 2007
I was so excited to make this, but ended up a little disappointed. Per some reviewers, there was too much filling, so I halved the entire filling for one regual pie crust and it worked perfectly. But, the quiche just would not set. I had it in the oven for about an hour at 375, and it was still soggy.

Baked Potato Soup

Reviewed: Apr. 18, 2007
This was very good. I added a little extra flour to make it thicker, and added cheese and bacon to the soup itself, as opposed to a garnish. The basil was a little strong, as others have noted, but we still really enjoyed it.

Supreme Strawberry Topping

Reviewed: Apr. 8, 2007
WOW!!! This was the hit of our family's Easter celebration. I tripled the recipe for our party of thirty people and served it over cheesecake. I ended up pureeing the entire batch, and I'm glad I did. It was perfect and I got nothing but rave reviews! My husband and I are very happy to have brought some home to serve over ice cream later.

Baked Potato Salad I

Reviewed: Apr. 3, 2007
We thought this was good, but it could have been better. I considered it to be like a twice baked potato casserole, so next time I would probably use all sour cream instead of mayo to give it that twice-baked potato flavor. Also, I used a cheese blend instead of the american cheese, so more sour cream was necessary since the cheese blend didn't melt as much and made it a little dry. But, the idea is great, and we'll be making this again.

Pepper Steak

Reviewed: Mar. 29, 2007
The sauce was really good. I too used beef broth instead of bouillon and omitted the water chestnuts. However, the steak was a little too tough. I used stir-fry beef strips, and next time I would marinate them prior to cooking to ensure a more tender meat. But, I will be making this again.

Broccoli and Sausage Cavatelli

Reviewed: Mar. 27, 2007
This was pretty good, but there was nothing that really grabbed us about it, it was just pasta with broccoli. I added two cans of diced tomatoes, because we like "saucy" pasta.

Penne with Spicy Vodka Tomato Cream Sauce

Reviewed: Mar. 24, 2007
The flavor of this sauce was outstanding. We bought some high quality vodka, and that made quite a difference. Also, we were happy to find the mini "airline" versions of the vodka so we could get good quality without spending a ton. There are a couple things I would change next time I make the sauce, though: 1. I would use more sausage. We couldn't even tell it was in there. And 2. Use tomato sauce instead of the diced tomatoes to make the sauce a little thicker, it was really thin, and for a creamier texture. But, delicious nonetheless, and we look forward to making this recipe again!

Cobb Salad

This was a very good basic recipe. My husband requested Cobb Salad, even though he can't stand hard-boiled eggs or tomatoes. (So it was basically a chicken and bacon salad.) But, we both enjoyed it.

Sarah's Applesauce

Reviewed: Mar. 9, 2007
Wonderful!!! I use a mixture of granny smith apples and gala apples. They are great with porkchops for dinner or breakfast. Another thing we like this recipe for is dessert. Just cook the apple chunks enough to where they are soft and warm, but don't mash them. Instead, serve them in their sauce in chunks over vanilla ice cream. Yum!

Catherine's Spicy Chicken Soup

Reviewed: Mar. 7, 2007
This was good and I will make it again, but in my opinion, 3 TBS chili powder plus 16 oz. of salsa is WAY too spicy. I used the salsa and only 1 TBS chili powder, and it still had quite a zip to it. I used some leftover rotisserie chicken and threw everything in the crock pot on Low for 8 hours. Next time we will add tortilla chips and make it like a chicken tortilla soup.

To Die For Fettuccine Alfredo

Reviewed: Mar. 2, 2007
The flavor is definitely restaurant quality. We loved it! The only reason I am giving it 4 stars is because I could not get it to thicken despite adding extra cheese. I will certainly make this again, but try to figure out how to make it a little thicker.

Asian Chicken Salad

Reviewed: Mar. 1, 2007
This was a really good salad, but the dressing came out a little too sweet. I would probably decrease the brown sugar a little bit. In addition, I used leftover teriyaki chicken, which I think gave it more of an asian salad taste than regular grilled chicken would have. But, my husband is a salad lover, and he enjoyed this one.

Pecan Crusted Chicken Salad

Reviewed: Feb. 23, 2007
This was a very good salad. However, next time I would either add Craisins or skip the cranberries altogether because they made it a little too sour. Also, I think a vinaigrette type dressing would have been better than the ranch. But, we really liked it, and the chicken came out very good. Also, we added candied walnuts and those really improved the salad as well.
