About this Cook
I'm married and have a beautiful baby girl. I love to cook, despite having never had the desire to even step foot in the kitchen before we were married in 2005. Now I fall asleep dreaming about different recipes to try, and love making a new "family favorite."
My favorite things to cook
Pretty much anything that sounds good, I'll make!
My favorite family cooking traditions
Saturday Morning Pancakes growing up. My mom would make pancakes every Saturday morning, sometimes using food coloring to make colorful pancakes, she'd make them into shapes, sometimes she'd use blueberries, raisins, or chocolate chips in them too. I still love pancakes, anytime, anyday, and I look forward to making this a family tradition when our baby gets a little older. For my husband and I, we enjoy decorating sugar cookies every year for Christmas.
My cooking triumphs
1.) My homemade Stuffed Shells. I usually have to follow recipes to a "T", the exception being Italian food. In my genes, I guess. Anyway, I developed a recipe for Italian Sausage Stuffed Shells that always gets rave reviews. 2.) Catering meals for my parents. They would pay for the groceries, and I would provide several days of weeknight meals for them to heat up and enjoy a nutritious, balanced meal after work.
My cooking tragedies
1.) Pregnancy...I was so sick for about four months I couldn't even stand the thought of food, and couldn't go near the kitchen. It was a bummer, since cooking is one of my favorite hobbies. My poor husband had to live off PB&J sandwiches for a few months. 2.) Don't ever bring up the name "Cowboy Casserole" in our house...that is the one meal in 3 1/2 years of marriage my husband actually spit out...he still shudders about that one. 3.) Homemade Pasta. It made me very, very sad in my heart...Last time I try to do something the "old fashioned way"! I just need to buy a pasta maker...OR those really neat prepared pastas in a box...

Slow Cooker Chicken Taco Soup
This was one of the easiest meals I have ever prepared, and it was delicious! It's a great recipe to customize. I used chicken broth instead of beer, added some chopped green bell pepper and used frozen Southwestern Vegetable blend instead of the corn. It was very mild, and I would have added more spices had my 1-year old not been eating as well. But, this was something we could all enjoy, especially when served with tortilla chips (next time I'm using Fritos!, sour cream, and cheese.) Thanks Patti!

Chocolate Chip Banana Muffins
These were delicious even though I had to add about 1/2 C of milk to make the batter the right consistency (it was very "doughy" as written). I also used vanilla yogurt instead of plain which was perfect. Next time I would add more chocolate chips, but I look forward to making these again with different fruit/nut additions!

Bacon for the Family or a Crowd
This was the easiest and best way I have ever made bacon. I typcially use the pre-cooked stuff because of how much I dislike frying it up. But, this makes perfect bacon without the mess! I used a cooling rack on top of a foil lined cookie sheet to ensure crispiness.
