Chocolate Buttermilk Cake

The cake flavor was great but beware, it will rise high and will sink as it cools. I will make it again but plan for this.

This soup was great! I took the tortillas first and stacked them and sliced thin strips out of half, Then chop the other half real good. In the oil first fry the strips till crisp and drain on paper towel and save for the end. Then I followed the recipe and added the crisp tortillas at the end and it was just like Mexico. Oh I added half Rotel and half diced tomatos, gave it a little kick.

Turkey Pot Pie I

This is such a good Pot Pie. I will make it forever. I used light butter and no fat milk so it is not too rich. I will add green peas next time.

Coq au Vin alla Italiana

Chicken Tortilla Soup I

I made my own stock and used the chicken in the soup. It was really good. It is a keeper. Also I crushed a 1/2 of a cup of tortillas up in the soup for the last 10 minutes.

Cream of Fresh Tomato Soup

This was very good and so easy. I added a bay leaf to the tomatoes and onions then a little chopped basil at the end.

Potato Salmon Patties

I used fresh salmon(poached), fresh potato(mashed) and Panco bread crumbs. Really good and you can used canned crab in place of salmon for good crab cakes.

Fresh Peach Cobbler I

Yum, this is a really good cobbler. Not too sweet and a light topping. I added a couple extra peaches so it was just right.

Szechwan Shrimp

I used fresh shrimp and ginger and stir fried it with the onion and garlic. Then added a hand full of peanuts at the end. Oh, so good!!

Pepper Steak

Really good. I added a cup of mushrooms with the peppers and a 1/2 teaspoon of sambal oelek(ground fresh chili paste)and it was great. I will add this to my everyday recipes.
