Portobello Penne Pasta Casserole

I made this tonight, didn't have spinach so I used frozen peas and it turned out great. I was unsure about the soy sauce but it tasted very good. Will make again, thank you!

Bran Muffins III

Made these with some changes, added 2 apples shredded and peeled, cinnamon, 3 splenda packets, 1/2 tsp nutmeg, only 1 1/2 TB butter and did not have molasses...wish I would have. They turned out nice!

Iced Pumpkin Cookies

I made these today, and realized once I started making them I did not have butter...I used veg oil and a whole can of pumpkin. I also used part brown/part white sugar...extra cinnamon and did not have cloves so added allspice instead. I added cinnamon to the glaze which made for a nice flavor...I think would be even better with butter.

Joy's Prizewinning Trifle

Made for a picnic, was a hit! Used cream cheese pudding with one cup of milk, then added sour cream, then 8oz of cool whip. Used a sour cream angel food cake, soaked the bananas in pineapple juice before placing on cake. Really a great, pretty recipe! Thank you:-)

We really liked this, the only thing I would do next time is add mushrooms and maybe some other veggies. I didn't use as much oil as the recipe called for. Very good though!
