Amazing Simple Thai Tofu

The color of mine was kind of funky... grayish, but the flavor was really good. Maybe even better the next day... Oh, and I added the sesame oil at the end.

Luscious Buttercream Frosting

This is so much better than canned frosting; it didn't have that nasty oily mouthfeel for starters. I replaced the margarine with butter.

Chocolate Mint Candies Cookies

We loved these, and my 7-yr old wants to take them to class for his birthday. The only change I made was to use 2 C mint chocolate chips (very minty!) and 1/2 piece of After 8's on each cookie.

Easy Black Bottom Cupcakes

I gave these 4 stars since the cream cheese sinks and disappears, even though I added an egg. I made these for a bake sale, so the non-appearance of the filling is a disappointment. Maybe I would bake the cupcake for a few minutes and then add the filling? The recipe made 28-30 cupcakes.

Banana Oat Muffins

I made a few small changes and left out the topping, and they were great! I used half whole wheat flour, 1/2 C white sugar and 1/4 C brown sugar, toasted walnuts, 1/3 C butter, and about 1 1/2 C bananas. The recipe made 18 muffins for me. They are really good, and reasonably healthy!

Easy Pumpkin Muffins

These are so easy! I added 2 eggs as others suggested, and I added 1/2 C applesauce. They rose nicely, and the recipe easily makes 18-20. I gave only 4 stars since they are more like cupcakes than muffins (fluffy and pretty sweet).

EZ Meatloaf

This was so good! I made some changes: added onion, green bell pepper, garlic, and parsley. I cut back a bit on the water, since I put the veggies through the ciusinart, and they were pretty watery. I cooked it in the microwave, and it was plenty moist and smelled so good! Thank you for the recipe!

Black-Eyed Pea Gumbo

I am always looking for healthy recipes that my 3 and 5 year olds, my husband, and I will like, and this was a hit for all! I did add turkey kielbasa a the end, and next time, I will not cook the onion, celery, and peppers with the rice (they got too mushy). Thank you!

Cha Cha's White Chicken Chili

I made this in the crock pot, adding the onion and garlic raw, but the chicken was cooked. I used 1 can of diced green chilis, no jalapenos and no cayenne since I was making it for kids, too. I pureed one of the cans of beans, so it had a nice thick texture. We all liked it, and it was not overly spicy.

Bran Muffins a la Brian

Nice, moist muffin, but a little sweet for us. I'll decrease the sugar next time. I also added 1 tsp cinnamon, and I'd try to replace some of the oil with applesauce next time.

Grilled Eggplant, Tomato and Goat Cheese

I made this just as described but with a basil leaf on top of the goat cheese. My grill ran out of gas as I was cooking them! I finished them in the oven, and they are soooo creamy and good!
