Cod with Italian Crumb Topping

I cooked this the other night and also used mayo in place of the egg, plus I used Kraft's 5-cheese Parmesan blend that comes in the shaker cannister and added about 1/4c. because we like things cheesy around here. I rinsed the fish before coating and topping so it didn't smell/taste as "fishy" and cooked it on convection like another reviewer suggested. I have NEVER seen fish disappear at my table as fast as this did! Typically the only way my family eats fish is off the grill, but my husband told me he'd "let me" make this any time I wanted to! :)

Boilermaker Tailgate Chili

We followed the modifications of reviewer Valerie's Kitchen (1/18/08) because my husband can't have really spicy foods but loves chili, go figure. I used ground turkey instead of beef to cut out some of the fat, left in the green and red peppers and also added some kidney beans for texture. Finally, I made it in the crockpot instead of a stewpot. A halved version of this recipe fed 2 people for about 3 days and it was EXCELLENT!! Definitely a keeper!

Awesome Slow Cooker Pot Roast

This is a staple in my busy house once it starts getting cold and if you buy a big enough roast, it's easy to cook once and eat twice. Roast the first night, then mix the leftovers with a hearty beef-based soup (thicken with cornstarch) and serve over biscuits for beef stew on night two. We add lots of potatoes and a whole pound of carrots on the bottom of the crock and it's about the only time my kids fight over who GETS to eat cooked vegetables instead of who HAS to eat them!

Yummy Sweet Potato Casserole

I thought this dish was terrific but it didn't go over so well with the guests at Thanksgiving dinner. I think it was the consistency (kind of like lumpy baby food) when they were used to cut up sweet potatoes (but without marshmallows - horrors!) so this dish may be good for people willing to TRY new things, but wouldn't serve to a traditional group of people.

Easy Decadent Truffles

Wow, these are almost TOO rich. One is enough to keep me in a happy chocolate mood all day and SO easy! I think it would be yummy to try with some flavorings like cherry, strawberry or maybe mint.

Lobster Bisque

I think the flavor of this dish was ok, nothing exceptional, but it was a little on the thin side and didn't quite live up to my expectations. Hubby said it was good, but I'm not sure he wasn't just complimenting the effort of making him an entire seafood dinner. I'll give it another shot eventually - hopefully I just didn't do something quite right since everyone else has rated it so highly.

Cinnamon Pancakes in a Jar

This was a nice idea and tasted pretty good, but the pancakes were thin and heavy rather than light and fluffy like with Bisquick. May have to try an adaptation. The flavor was great, though!

Make-Ahead Mashed Potatoes

This is a GREAT time saver for a busy holiday. I make ahead then throw in the crockpot on low the morning of the holiday so that I save oven space and they're ready to eat by the time the rest of the dinner's done. I've had several requests for this recipe. Also really good using redskin potatoes!

Hudson's Baked Tilapia with Dill Sauce

Easy enough for my husband to make, once I pointed out the broiler. =) My stepson calls it "the fish that tastes like sausage." Different from what I was expecting, but still good.
