About this Cook
I am 27 years old and happily married to the man of my dreams. We have a one year old son who has changed my cooking style from long and technical to short and easy! I have two huge passions in my life - running and cooking. I guess I'm lucky that my two passions even each other out! I have heard the old saying "don't trust a skinny cook," and I think it is completely false! Granted, some lowfat and fat free cooking does taste poor, but that's all I cook and I assure you I only make good food! People are amazed when I serve something delicious and later tell them it's not as sinful as they may have thought!

My favorite family cooking traditions
My brother and I always used to make this streusel coffee cake. It was always good but I wish I could find something now that compared to that!
My cooking triumphs
I have made the Tiramisu Layer Cake from this website so many times I have lost count and that is not even the fraction of the amount of requests I have gotten for the recipe and the dessert itself! I also get requests for my manicotti and lasanga recipe!
My cooking tragedies
It was french...I should have known that if I couldn't pronounce it I would never be able to make it!

Chicken Pot Pie IX
I made this tonight with a few alterations to fit our tastes. I purchased a rotisserie chicken because I was short on time and used all the breast meat, which I cubed per the recipe. I used the 1 cup of carrots, 1 cup frozen green peas, and substituted 1/2 cup frozen corn for the celery since we don't care for it. Since the chicken was already cooked, I diced the carrot and also diced up a sweet potato and roasted them in the oven at 425 for 10 minutes. Meanwhile, I diced a whole yellow onion and sauteed it in cooking spray with Italian seasoning, minced fresh garlic, and minced fresh basil. I then added 2 cups of chicken broth after the onions were tender as well as 3/4 cup milk, and the flour, salt, and pepper per the recipe. I ended up adding cornstarch to thicken the sauce since I added additional liquid. Then I followed the recipe as specified. My husband, who does not particularly go out of his way to eat a chicken pot pie, found this dinner to be delicious and went back for second!

Apple Pecan Cobbler
I didn't really care for the pecans in this which is odd because I usually enjoy the combination of apples and nuts. The cobbler part was also more cakey than I prefer, but thanks for sharing!
