I have been married to a wonderful man, Michael, for 13 years. He loves my cooking and I try to make every meal a "special meal". I love to set the table and use our "good dishes" for no reason at all. I have three sons that are married and I have one grandson and two beautiful little granddaughters. All my sons are wonderful cooks and so are thier wives. I love to cook comfort foods...casseroles, spaghetti and meatballs, red beans and rice, gumbo are just a few examples. My husband loves to fish so I am can put on a pretty good fish fry!!! My mother came from a big Italian family and there was always spaghetti and meatballs cooking at my grandmothers. My mother carried on the tradition and now I carry on the tradition. The kids always look for spaghettia nd meat balls when they come to visit. It is one of my husbands absolute favorites. I have to watch him or he will eat almost all the meat balls before dinner. He calls it "sampling". I think mastering that perfect roux for gumbo was my biggest triumph. Not because it is so hard to do, I was always affraid that I couldn't do it. Now I love the process and excitement of getting the roux to the that perfect point without burning it. oh, so many.... the worst was when I was baking biscuits and sprayed the pan with oven cleaner instead of Pam and didn't realize it until we had eaten them.
