About this Cook
I have been married to a wonderful man, Michael, for 13 years. He loves my cooking and I try to make every meal a "special meal". I love to set the table and use our "good dishes" for no reason at all. I have three sons that are married and I have one grandson and two beautiful little granddaughters. All my sons are wonderful cooks and so are thier wives.
My favorite things to cook
I love to cook comfort foods...casseroles, spaghetti and meatballs, red beans and rice, gumbo are just a few examples. My husband loves to fish so I am can put on a pretty good fish fry!!!
My favorite family cooking traditions
My mother came from a big Italian family and there was always spaghetti and meatballs cooking at my grandmothers. My mother carried on the tradition and now I carry on the tradition. The kids always look for spaghettia nd meat balls when they come to visit. It is one of my husbands absolute favorites. I have to watch him or he will eat almost all the meat balls before dinner. He calls it "sampling".
My cooking triumphs
I think mastering that perfect roux for gumbo was my biggest triumph. Not because it is so hard to do, I was always affraid that I couldn't do it. Now I love the process and excitement of getting the roux to the that perfect point without burning it.
My cooking tragedies
oh, so many.... the worst was when I was baking biscuits and sprayed the pan with oven cleaner instead of Pam and didn't realize it until we had eaten them.

Cordon Bleu Chicken Rolls
This recipe is great. I thought the sauce was going to be heavy, but it was so good. Very light and creamy. I will always include it when I make this recipe.

Strawberry Avocado Salad
This is a wonderful salad...Even the men like it. It is very pretty and refreshingly cool and light. Just make sure the avocados are ripe or it will be bitter.

Creamy Potato Pork Chop Bake
We loved this recipe. It a great comfort food for these cold and rainy days we are having. The fried onion rings make a great crust on the pork chops.
