Maple Banana Bread

Pretty good bread. I didn't have maple syrup so I pondered for a while and used honey and maple flavoring instead. It needed another 10-15 minutes past the stated bake time, but that seems to happen a lot in my oven. The taste is good and it's moist. Thanks for the recipe!

Pillow-Soft Dinner Rolls

Nice rolls for sandwiches. Bf didn't complain they were hard, so they must be a hit. I halved the recipe and I wish I hadn't made 12 rolls only bc I wanted them as sandwich rolls. The amount of bread recipes I've made, I should know better. It would've been better to make 8-10 rolls for sandwich size. Ah, well, no sweat off the recipe's nose. Thanks for the recipe!

Plantain Chips

These are pretty good. I have no idea if I did them correctly or not. This is the first time I've made anything with plantains, and for some reason I was thinking they'd be just like potato chips. Well, if they are supposed to be I cooked them wrong, because mine were still a bit soft and chewy on the inside but crispy on the outside. I thought they were good. I'm not a big fan of frying, though, so I wonder if they could be baked. Perhaps I'll experiment with that next time. Thanks for the recipe!

Caramel Apples

Perfectly easy and taste is great. As for coating the apples . . .well, that's not my strong suit! Apparently I need some practice in that. Other than that, this recipe is extraordinarily easy and fast. Bf gobbled up an entire apple in minutes. I probably won't just bc our apples are huge, but I tried a few bites and it was perfect. Thanks for the recipe!

Butternut Squash with Onions and Pecans

I left out the onions because we aren't huge onion fans, but that might have been a mistake bc I felt this dish was missing something. I should've added garlic instead I think. Still, I really like butternut squash and I'm not going to penalize a recipe for my mistake. I think I prefer butternut squash baked--just my personal preference, so I'd do that next time. Bf apparently just doesn't like butternut squash, which he hasn't really told me before. So I guess I'll try it again just for me. Thanks for the recipe!

Black Cat Cookies

Okay, for a fussy, detail oriented recipe (no offense, but there are a lot of steps in this recipe to get them cute!), the directions are easy to follow and the cookies are decent tasting. I actually made the entire recipe of these--a rarity for me in recipes like this where you have to do several steps for each individual pieces. I stopped putting in the craft sticks about 3/4 of the way through--not because of I was tired of doing it, but because I was running out of places on my cooling rack to place the cookies. It's much less difficult to place them on the rack without the sticks in them! I made these for my coworkers kids and I think they will get a kick out of them. I, too, parbaked these to 5-6 minutes then added the candy and baked another 5 minutes. Be careful, though, and watch them, as I overbaked the first batch (I did a total of 12 minutes on that first batch) and the candy corn melted. 5 min before candy and 5 min after candy seemed to work perfectly in my oven until the last batch--not as many cookies then, which made the cookies cook faster anyway. Basil Tomato Rolls

Yum. I like these! My only complaint is that there wasn't more filling since I adore tomato sauces like this, but in all reality it was probably just enough. I also had a bit of trouble making the indentation--in the end, I made them almost as if I were making bagels--pinching in the middle and going around the inside edge to make a bowl. It might be easier to just roll out the dough and put in the filling, then roll up like a french loaf and seal. Methods on filling aside, I like these rolls and I find the bread itself perfect to go along with the sauce. It's supposed to be bland so the sauce can shine, and the bread recipe is no different than a lot of french bread/roll recipes I've seen. Thanks for the recipe!

Sylvia's Shrimp Supper

I didn't use canned shrimp in this but used frozen, already cooked shrimp. Since it was already cooked I just added the shrimp at the end and when the mixture started to boil again I served. I didn't have the veggies called for so I used 2 vine tomatoes, which gave the sauce a bit of a pinkish color. I didn't follow the instructions for adding the flour, but since it sounded like making a roux, I just did what I normally do. I cooked the flour first, then added the milk and stirred to make sure there were no clumps. Flour tastes like flour unless you cook it (very briefly so it won't burn), so that was my adjustment. Bf seemed to love this, and I thought it was pretty good too. I served over salmon burgers--his idea, and although it sounds weird, it worked. We'll probably eat the leftovers over some pasta, maybe spaghetti, as I think it would go well with it. Thanks for the recipe.

Award Winning Soft Chocolate Chip Cookies

This is definitely a simple, and yes, very soft, chocolate chip cookie recipe. The dough is perfect and although I think the recipe could stand a bit less chocolate chips, they certainly passed the bf test. He kept grabbing the cookies and running away with them so I finally made him a plate so he wouldn't get it my way. They definitely make a ton, though . . .unless you halve the recipe, you'll need a very large bowl to mix, and it will take a while to make the entire batch. Mine were perfect at 12 minutes, although I tested 10 minutes first in my oven. People just have to play around as every oven is different. Thanks for the recipe!

Oatmeal Raisin Cookies

Excellent oatmeal raisin cookies. They're sweet but not overwhelmingly so, and they are crispy, chewy, and soft all at the same time. I used sliced almonds since I don't have walnuts (bf doesn't like them so I don't buy them anymore) and used regular raisins instead of golden, but otherwise followed the recipe. I love golden raisins so I bet I'd like these even better if I'd followed that direction. thanks for the recipe!

Chinky's Mango Bread

I meant to halve the recipe bc I barely had a cup of mango but I forgot until halfway through putting the ingredients together. So I switched gears and added a few nectarines. Mine sunk in the middle and tastes more like a very moist cake than a quick bread, but we'll lay the blame for that directly at the bf's door. I asked him to check the bread and take it out when it was done since I had to leave in the middle of baking, and I don't think he checked it that well. It's edible, but not going to make it to the bake sale I had in mind. Still, I don't think it's the fault of the recipe bf took it out too soon! I agree with other reviewers that this bread does not taste like mango at all--just like a sweeter quick bread. not bad, but I prefer fruit flavor in my fruity quick breads. Thanks for the recipe1

Ginger and Spice Cookies

These aren't bad, but they lack a bit of oomph for me. or star power. whatever you want to call it. The spices just don't shine in these cookies, and I'm a little addicted to flavor. They aren't bad, though, just not up to my standards, weird as they are. ;o) I made the dough this morning and had to put it in the fridge, which led to very small very round cookies that didn't flatten until I squashed them with a spatula. Don't know if it would happen again if I didn't refrigerate, but at least they flatten well. I flattened after baking and before baking; I think I prefer flattening immediately after baking bc they crinkle up and don't look so uninteresting if you flatten before baking. thanks for the recipe!

Crusty French Bread

Very basic, easy, and good french bread. the name seemed to be a misnomer to me. I didn't brush it with the egg yolk and water mixture, and the crust browned beautifully but it's very soft. I'd think that water in the oven would help it be crusty though. And no complaints here as the recipe was spot on for a standard french loaf. Thanks for the recipe!

Honey Wheat Sandwich Rolls

I made a double recipe of these since we have a lot of stuff for sandwiches in the fridge. I thought they were good but bf said they were "hard". I do believe he means dense. I suppose for him I should've added some vital wheat gluten, but I never know . . .anyway, if I make again I'll add that vital wheat gluten for the picky bf. I didn't add the butter bc I was planning on them for sandwhiches. thanks for the recipe!

Asian Roll Lettuce Wrap

Not too bad. I don't mind the meatball idea per se, but I wasn't confident about skewering them. Nevertheless, I thought I'd try it. Perhaps it's bc I didn't refrigerate them (made the recipe right before wanting to eat) but they slid off the skewers while grilling. I had enough foresight to put tin foil under neath so they didn't slide into the bottom of the grill, but I think broiling or grilling on a pan or foil is good enough and they don't need skewered. I'm not a huge fan of rice, so that part didn't do it for me, but bf seemed to really like them. Don't know how it happened, but we seemed to have converted him to liking ground turkey. :o) Now for mustard . . .anyway, he really liked the sauce. Thanks for the recipe!

Sweet Potato (Kumara) Wedges

Very nice flavor. I like the mustard powder. I halved the recipe but kept the same amount of spices except the flour--I used about 1 or 2 tablespoons of flour and added some crushed red pepper. Worked very well. I baked them for about 1 hour and flipped the sweet potatoes at 30 minutes. Still, I made big wedges so if the recipe meant small wedges they would've been done sooner. Bf and I ate these plain; no dipping sauces or sour cream needed and we enjoyed them very much. Thanks for the recipe!

Banana Coconut Loaf

Very nice bread. A little sweet for me, but I'm a bit of a sugarphobe. It does look very pretty. Oddly enough, my bread took a lot longer than stated--about an hour and 20 minutes. I guess I'm had the opposite problem than other reviewers who felt it could come out more quickly than the recipe stated. It must all be because our ovens are different. Other than decreasing the sugar a tad, I would make this again without major changes. Thanks for the recipe!

Oatmeal Raisin Cookies VII

I found these to be a tad too sweet. They were crumbly and soft, which is great except they were a bit difficult to get out of the pan as bar cookies. I may try these again as drop cookies--may work better for me. All in all, relatively good and easy. Thanks for the recipe.

Bachelor Grilled Cheese

I do this all the time, although I don't wrap in a towel and put in the microwave. I just toast the bread and cheese together (like an open faced sandwich, then put together the bread), usually with tomatoes since I like my grilled cheese that way. Yes, it lacks that butter taste but half the time it makes my tummy uneasy and I always eat grilled cheese with ketchup anyway!

Prissy's Garlic Bread

pretty good. I think it needs more garlic, but I always think that. :o) Bf gobbled it up. When I asked him if he liked it, he told me he did and told me I was going to say it needs more garlic. Little stinker . . .anyway, I'd add fresh minced garlic next time, but all in all it's worth repeating. I didn't realize it needed to sit in the fridge for a while and so I just made it then put it on the bread right away, which was fine. Thanks for the recipe!
