Rasta Pasta

Lovely pasta. Very easy and turns out exceedingly well. I didn't put as much pepper in as called for--I'm not a huge fan of hot spicy. I didn't have green peppers so I used other peppers. All in all, very delicious and an easy dinner. Thanks for the recipe!

Cornmeal Molasses Bread

The bread went stale pretty quickly, but that's not unusual with homemade breads. We just didn't eat it fast enough this week. It's a nice tasting bread. I decided to make croutons with it bc it was stale and it makes great croutons too. thanks for the recipe!

Orange Oatmeal Raisin Bread

Very nice. I left out the raisins bc of the time factor--I used my bread machine to mix and wasn't home for the fruit and nut beep. I'm sure it would be good with them, so I'll try next time. I used all oj instead of water, so I could taste a bit of orange, although it wasn't a lot or overwhelming. Nice texture and bakes up well. I baked at 50 min in a 375 degree oven. thanks for the recipe!

Buffalo Chicken Dip

This is not my favorite dip, but bf really loves it, and everyone at the party we brought it to really enjoyed it as well. I'd never made it myself but have had it at other parties. Bf promised the hostess we'd make this, so I had to go hunting for the recipe. This is the one! We kept it in the crock pot as long as possible--this really needs to be served warm in my opinion. I boiled chicken breasts instead of using canned chicken, which works very well. Bf shredded the chicken for me. Thanks for the recipe!

Cranberry Dip

Very good. Incredibly simple, and very nice. A good addition to the dishes at the housewarming party we went to this afternoon. It also has the happy result of using up the remaining cranberries in my freezer from last year and using up the jam in my fridge. I didn't have apricot jam, but I did have peach, so I used that, which worked fine. I didn't have quite enough jam but it was still plenty flavorful and sweet. Everyone seemed to love the dip, and I left it there bc the hostess loved it. thanks for the recipe!

Cranberry Orange Cookies

Pretty good. I wasn't so sure of these right out of hte oven, but the next day I really liked them. I didn't put the icing on--maybe I'll try that next time, but didn't want to deal with that this time. Thanks for the recipe.

Crustless Cranberry Pie

Love it! So easy and a great way to use up cranberries. I love the combos in this. I didn't have enough almond extract, so I used some vanilla extract too, and it was great. Thank you for the recipe!

Cranberry Orange Loaf

Very good and very easy. I doubled the recipe and made two loaves and 12 muffins. The loaves took about 1 hou and 20 minutes, the muffins about 40 minutes. Turned out sweet with a bit of tartness from the cranberries. I don't taste the oj much, but it definitely complements the flavor of the cranberries. Thanks for the recipe!

Best Roasted Red Pepper Spread

Couldn't be simpler, and full of flavor. In my opinion does'nt need much else to shine. I did add more garlic, but then I always do. Sort of an automatic pilot thing, as I love my garlic. A little thin for a sandwich spread, but that's easily adjusted by putting in less vinegar and oil. Still, it's about the consistency of a marinara so it still works. I love the flavor and think I'll pair with feta and turkey on bread tonight, then warm it in the oven for a warm sandwich. Thanks for the recipe!

Hudson's Baked Tilapia with Dill Sauce

Mmm. Delicious! the fish itself is fine, and I'm good with the baking method. It's how we bake salmon as well. The dill sauce, however, is what makes this recipe a 5 star. The taste is wonderful and goes so well with the tilapia and the cajun seasoning. I think I will experiment with the fish--maybe try old bay or lemon pepper next time, but the dill sauce doesn't need a thing added or subtracted. I don't have lemons so I used lemon juice and poured on the fish, then rubbed in olive oil, then rubbed in the cajun seasoning. It worked perfectly. And if you get a bit too much seasoning on one filet, which I did, the dill sauce cools it down. Perfect. Thanks for the recipe!

Easy Spinach Lasagna with White Sauce

easy and pretty tasty. A little too much liquid, though--I don't think the added milk is necessary. I left out the mushrooms and instead of ricotta used fresh mozarella and mixed it with the spinach in the food processor. Worked perfectly. Thanks for the recipe!

Caramelized Baked Chicken

Pretty good. Bf complained it was gooey--he apparently likes crispy chicken wings like you get when you fry--but otherwise liked the flavor and the wings themselves. I am not a fan of wings, but these weren't too bad. thanks for the recipe!

Peasant Bread

Very easy, nice and soft. Made this bread for bf who doesn't really like whole grain breads, and it was a hit. I'll have to make it again for him, as he gets cranky when I don't remake things. This is good, and a basic, plain white bread. thanks for the recipe.

Mashed Sweet Potatoes by Jean Carper

Not bad. I could taste the amaretto and thought it went relatively well with the sweet potato flavor. Bf didn't notice it at all. He said he'd prefer plain sweet potatoes instead of any mashed, but he's boring that way. I didnt use the microwave to bake the sweet potato but put them in the oven for about 40 min or so on 400, then peeled off the skin and mashed. thanks for the recipe!

Mustard Wheat Rye Sandwich Bread

Delicious! yes, absolutely wonderful with cheese. I'm not even upset that I have to make another loaf of bread for bf since I doubt he's going to love the mustard in this. I adore my breadmaker but rarely bake a loaf of bread in it--I normally just use it to make the dough then finish it off in the oven. That's what I did today. I decided to make a regular bread loaf by using my bread pan. Worked out great. The dough smells heavenly before even going into the oven, and it smells great while baking. I baked at 375 for about 45 minutes and it was perfect. Very soft on the inside and crunchy on the outside. And it rose wonderfully well--let me add my voice to the others saying the wheat gluten really is important. Add it if you make this bread! Thanks for the recipe!

Jerre's Black Bean and Pork Tenderloin Slow Cooker Chili

Very good. I didn't have 3 cans of black beans, so I just used 2, and it turned out fine. I also used a pork tenderloin that was pre seasoned with onion and garlic. It had perhaps some other seasonings as well, but it worked perfectly. The salsa gave it a nice bite and the beans and pork made this a very filling dinner. I let it cook in the slow cooker probably about 8 1/2 hours, then broke up the pork with a fork. It was so tender and easy to break up, and it definitely does make it a thicker chili as opposed to a stew if you break up the pork chunks. Bf gave this his seal of approval. :o) Thanks for the recipe!

The Whole Jar of Peanut Butter Cookies

Very nice. Easy, and soft and chewy cookies--my favorite kind. I have a Costco sized jar of peanut butter, so I used my scale to weigh out 18 oz. I put in a tad bit more, but I figured it didn't matter. If I had chunky pb open, I'd have used that instead of adding peanuts, but since what I had was smooth, I did add the peanuts. I like the crunch they make and I like how it looks with the cookies. The dough is pretty sticky so I, too, dipped a fork in sugar to get the hatchmarks--on a few, if I didn't, they stuck to the fork. Thanks for the recipe!

Bolas de Mani (Peanut and Plantain Balls)

Theser are pretty good. Not sure how to rate, as I did change it up a bit based on reviews and what I had. I planned on using green plantains, but by the time I got around to making these my plantains were ripe, so I just decided to go with it anyway. I added some pumpkin pie spice and some honey, but I'm not sure I needed to. You don't really taste the peanut butter, but the plantains have sort of a tart taste that is really nice. These don't look that appetizing (you'll see from my picture!) but they are a nice little snack. I think that 45 min was a bit too long for mine--some are a bit dark on the bottom. Flourless Peanut Butter Cookies

Wow, these definitely are rich and heavy--one is enough to satisfy! And they could not be easier. What took the longest was waiting for something else to come out of the oven so I could put these in. They definitely make a very small amount--I got about 19 cookies out of one batch. However, it's an easy enough recipe to double if interested. I didn't even have to haul out the hand mixer for these. Thanks for the recipe!

TexMex Scrambler

These aren't too bad. I like to experiment with different types of eggs--I love eggs for breakfast--so I thought I'd give this a shot. I like the spiciness the salsa lends to the egg beaters. I use egg beaters all the time, especially in baking, to cut down on the cholesterol, but they really don't have much flavor in regular cooking. You are better off jacking up the seasoning or using real eggs instead, but the salsa in this takes care of that. For those of you who don't use egg subs, 1/4 c egg sub=1 egg. I can't say I like the tortillas added to this, and I just put the eggs and salsa together in the pan so both were cooked at the same time. Bf wasn't too impressed--not so sold on the idea of eggs and salsa. So, something I could make again for myself but apparently not for the bf! I used a black bean and corn salsa for mine. thanks for the recipe.
