I am a 42 year old married male. I have been living in England for almost a year, but my wife is a native to England. I enjoy movies, bicycling, gaming (both on-line and off) and, of course, cooking.
My favorite things to cook
Smoked meats, salsas, and anything with habaneros in it.
My favorite family cooking traditions
I love hamhocks and beans. My mom used to fix it all the time. I don't get to eat it much anymore, as my wife does not like it.
My cooking triumphs
I can easily say nearly anything I get my hands on. One thing that comes to mind were two 13 lb Thanksgiving turkeys I did several years ago. 24 hours in an apple and cherry wood fueled silo smoker. My friend's sister even liked it - and she doesn't like turkey!
My cooking tragedies
When I arrived here in England I decided to try and fix some gammon steaks for my wife and I. I was not familiar with them except from having one or two in the local pub. I had no idea I should have had soaked them in water prior to cooking them. Needless to say, they were so salty we could not eat them. Another time I was making habanero hot sauce on the stove and it burned. It filled the place with the most irritating smoke you can imagine. I was coughing for hours afterwards.

Habanero Hellfire Chili
I had no Anahiems available and modified the recipe only slightly by using fresh tomatoes rather than whole canned ones and leaving the seeds in all of the chiles. I was surprised that the recipe is not as hot as I thought it would be! Excellent blend of flavours! Rich and firey red colour as well.
