Goat Cheese Stuffed Tomatoes

Good flavor, but I'm so used to stuffed tomato filling having more weight...this was very soft/runny. I think next time I'll do what others have suggested and add rice or couscous. It would also be good in cherry tomatoes, where the filling would be proportioned to the tomato better.

Delicious. It was very sweet...may try using half the sugar next time. Oh, and I didn't stir it after 2 hours like the recipe said, and it still had a soft, scoopable texture.

Baked Fried Eggplant

This turned out great, and for a lot less work than frying as well as fewer calories. Changes: didn't have sour cream, so I used....gasp...Miracle Whip!!! Also, sliced thinly and turned heat up to 350. Thanks, this recipe is just what I was looking for.

Gazpacho I

The easiest and freshest of all the gazpacho recipes listed here. You don't need tomato juice like the other recipes, and I also skipped the tomato paste and olives. I added a spoonful of pesto for flavor and texture, but it would be equally good without. A keeper!

Cheesy Zucchini Casserole I

I use 2 cups of store-bought croutons (thanks, "Mrs. Cubbison"!) and half an onion instead of a whole one. One of my favorite recipes for a side dish...my vegetarian friend uses it when her relatives come over, since it's something they both enjoy. I've used yellow summer squash too...a little different taste, but still yummy!

Ok flavor, but way too much garam masala...did you mean 1 teaspoon and not 1 tablespoon? I used the "Spice Islands" brand garam masala and it was way too salty. Wonder if I would have gotten better results with a different brand?

Chicken Breasts with Lime Sauce

This was so easy to make and delicious! The lime juice was a little tangy, so I added about a tablespoon of white table sugar which seemed to balance it out fine. A keeper!
