Spiced Pickled Beets

No Bake Cookies I
Fantastic! I left it at a rolling boil about 2 minutes. Texture was perfect and they held together perfectly. Because one reviewer said they were awfully sweet I cut sugar to 1 1/3 cup and they were still a bit too sweet for my taste. Next time I'll use 1 cup. I used a 'heaping' 1/2c peanut butter (probably 3/4 cup). I melted the vanilla and peanut butter into the chocolate mixture until smooth before adding the oats. And I did NOT use quick oats (I saw some reviews that said you must). Either is fine. Cooking oats are less processed and a bit better for you. You cookie might be a little more chewy. I don't think I can tell the difference. Great recipie!

Neat Sloppy Joes
Delicious! And easy to make. The kids are already asking for it again. I used 3 stalks of celery and one small/med onion (a tad more than the recipie calls for but easier than measuring). Perfect.
