Sweet Potato Pie I
Hands down the best sweet potato concoction I've ever had. Not too sweet, and it is so incredibly light in the mouth. Rave reviews from the whole family.

Salsa Chicken
I had winged a chicken with salsa recipe before but it turned out bland. The taco seasoning adds a very good amount of tasty goodness to it all. Definitely a keeper of a recipe, and SO easy.

Spanish Rice II
Very easy to make, and tasty despite my doubling the rice and forgetting to double the canned tomatoes. I did use chicken broth in place of water. Will have to make it again, properly, next time :)
