Basil Tomato Soup

I made this as directed. My only problem was I didn't like the basil that settled to the bottom. I plan to make it again and add dried basil and some parmesan.

My husband and I both liked this. Per the other reviews, I added more sour cream and black beans. I also added a package of frozen southwestern corn with the peppers and onions. I used instant rice also. This was very good and I will make it again. I only added 1 can of green chilis but will add 2 next time. I think I will also use Pepper Jack cheese to give it a little more zip.

Summer Bean Salsa

I have had this before and found the recipe here. It's a nice accompaniment to grilled burgers or as a dip. I added a little extra lime and also some garlic since my family loves garlic.

English Royalty Chocolate Chip Scones

This was my first time to make scones. These are very good and easy. Glad to see others added more liquid than just the 3T orange juice. I kept adding milk as I had used squeezed orange juice and was out of oranges. I also used Splenda instead of sugar. I couldn't tell the difference. I will make these again.

Slow Cooker Adobo Chicken

I read all the reviews before cooking. The only things I did differently was I used boneless, skinless chicken thighs and white vinegar. The dish was a hit. Both husband and grown son loved it. Hubby said he would eat it again.! Since there were no left overs, next time I'll double the recipe!! I served this over brown rice.

Great Pumpkin Dessert

I have a recipe similar to this that takes the dessert a step farther. Once this portion has baked, you let cool and then "ice" with a cream cheese/cool whip icing!!! Yummmmmmmyyyy!!

Feta Cheese Ball

I've made this several times and it's always a hit. Even those who start out by saying, "I don't really like feta, but.....". I like to take it to office potlucks.
