Downeast Maine Pumpkin Bread
LOVE IT! Picky husband and toddler like it too! I made some substitutions though. I usually cringe when other people do this, but I wanted to make it a little healthier! To my credit, I didn't do much doctoring - I used fresh pumpkin instead of canned, applesauce instead of vegetable oil, cut 2/3 of the sugar, and substituted 1/2 of the flour with whole wheat flour. Lots less calories and lots healthier! I ate so much of this before dinner that I just didn't bother eatting dinner - I made up for it with this yummy bread!
