Low-Fat Blueberry Bran Muffins
I made a couple substitutions for health reasons and they still turned out fantastic! I didn't have wheat bran so I used wheat germ. I don't do dairy, so I substituted soy milk for the nonfat milk. I used Splenda brown sugar for the regular brown sugar and used 1/4 cup Eggbeaters egg substitute for the egg. They are so moist and juicy when you bite into them, and I can eat them without any guilt! When I tell people to try my non-fat, non-dairy, no sugar muffins, they say yuck, but end up loving them! They are my daily morning snack.
