Broccoli Casserole
I make this same recipe excepting that I mix the raw rice in with all ingredients and add the same amount of water as rice. I ususally use one 10 oz. box of broccoli cuts, 1 cup of rice, 1 cup of water, 1 chopped onion, 4 Tbs. butter, and 8 oz. of Cheez Whiz. I also usually add a 4 oz. can of mushrooms, drained. Mix everything together in a large bowl and pour into an 8 X 8 baking dish. Bake for one hour at 350. Saves a lot of time in that you don't have to pre-cook the rice and broccoli. You can also add drained sliced water chestnuts.

Broccoli Casserole I
I've been making this casserole for about 30 years now, but instead of precooking the rice, I put the minute rice and an equal amount of water into the mix before baking at 350 for an hour. I also use more onion, but adding minute rice and water eliminates a step, some time, and an extra saucepan.

Garlic Pork Roast
I had to try this because I couldn't imagine sweet potatoes with onions and garlic. I trimmed all the fat off the roast and seasoned it with seasoned salt and garlic pepper prior to searing. I sliced one clove of garlic and placed the slivers in slits cut in the roast. Since I knew I would be gone for 9 hours instead of 6, I cut the sweet potatoes into large chunks and put them on top of the roast (I used 2 large onions and the garlic to line the crock pot). The potatoes were slighty soft, but not mushy. The flavor of the whole dish was superb. My mom and husband both agreed that this was a keeper!
