Artichoke and Black Olive Baked Chicken

A pleasant surprise!! Used marjoram and oregano in place of tarragon. Also added half a teaspoon of garlic to wine/broth mixture before pouring over chicken. The Hubs liked too!!

OH. MY. GOSH. SO delicious! The balance between the chocolate and the cheesecake is just right and not at all overpowering. The frosting is to die for and easier to make than I anticipated. I would have taken a picture but I didn't have time! It was gobbled up immediately at a work potluck. Going in my favorite file for sure!

Tropical Salad with Pineapple Vinaigrette

Zucchini Patties

Very tasty! Used cheddar since I did not have mozzarella. I will also be sure to sprinkle the zucchini with salt to drain the excess water-they took longer than a few minutes per side to set, I'm assuming it's because they were a little too moist. My hubby raved and raved about them. A keeper. Spanks! :-)

A Different Carrot Raisin Salad

VERY GOOD but a word to the wise: Only chill a few hours as directed in the recipe! I made the mistake of preparing it the day before and chilling overnight. BIG MISTAKE. The flavors blended too much, the dish became bland and the color turned to an unappealing yellow. Definitely best made and served freshed. Still a great recipe and I will make again!

Slow Cooker Dump and Go Cheesy Chicken

Very yummy! Since I did not have a can of cheddar cheese soup, I used one can of cream of chicken and added some Velveeta chunks. I added rice to the crock before hand to make it a one dish recipe. Don't think I'll do that again since it came out a little too thick. But still delish!

Tacos in Pasta Shells

HOLY BUCKETS! This was amazing! My husband could not say enough about it. "Oh my gosh!" followed every bite he took. I used turkey rather than beef and lite cream cheese. Also reduced the amount of shredded cheese because 2 cups seemed like too much. A total keeper! THANKS GRANNY!

Sugar Cookie Icing

PERFECT SUGAR COOKIE ICING! Used this for my BFF's baby shower and it dried smooth & shiny. Colors stayed vibrant. A definite keeper! I tried doubling the batch but it changed the consistentcy and was a little harder to work with. Also added 1 additional tsp of milk and it was MUCH easier to work with.

Cream of Coconut Cake

I made the mistake of using coconut milk instead of cream of coconut, thinking they were they same thing. The cake was not as coconut-y as I was hoping but still incredibly moist and delicious. Will definitely make again...with cream of coconut!

Hawaiian Macadamia-Coconut Squares

SO GOOD! The instant coffee granules give it a unique, can't-quite-put-your-finger-on-it taste. YUMMY! I served these at a Luau themed bridal shower and they were a hit.
