My favorite things to cook
I love to cook Mexican food. I also enjoy throwing together casseroles and crock pot meals.
My favorite family cooking traditions
Holiday cooking is my favorite time of the year to cook. It's the time of the year when family recipes come out (Grandma's Pecan Pie, Grandma's Broccoli Casserole and her Jello salad). I've added a few of my own over the years too.
My cooking triumphs
When I finally mastered enchiladas the way my mother-in-law makes them. There is no jar sauce, just authentic cooking with her twist! Wonderful!
My cooking tragedies
The first time I made gravy for my boyfriend (hubby of 15+ yrs). I knew just enough to get me into trouble. I knew you added flour to the grease and then milk. It wouldn't get "thick" so I kept adding more and more flour! He tasted it like a champ and just said hon it's a bit floury! LMAO poor guy... I'm sure it was a mouthful of flour goo! He doesn't say much about it now but gets this big grin when I make gravy!

Cupcake Graveyard
This was a really fun project for my son and I. I used Halloween Oreos for the dirt and added gummy worms and a spider to the mound. I used the fudge graham cookies for the tombstones and Wilton Buttercream Icing for the grass and lettering. After I lettered each cookie I placed them in the freezer to harden until I was ready to place them (overnight). I think this helped them stay firm when placed in the cupcakes for an extended period of time.

Bacon-Roasted Chicken with Potatoes
I used frozen chicken breasts and it came out great. I tossed my cubed potatoes and onions with some fiesta ranch dressing mix (dry). I also did not "wrap" my bacon, choosing instead to lay slices of bacon on top of the chicken. I placed the dish under the broiler for a few minutes about 20 minutes before it was done to crisp up the bacon. I added a mixture of colby and monterey jack cheese since we love cheese; mixed in half with the potatoes and then sprinkled the other half during the last 10 minutes of baking. I served it with sour cream with green onion mixed in. YUM!

Lemon Pie Bars
What an awesome recipe! I absolutely LOVED it! It was exactly what I was looking for in a lemon bar. I made 1 1/2 times the filling as recommended by tat2whttrsh aka Lambchop's Mom after reading a discussion regarding lemon bars on the RE. I loved the filling so next time I might even double it for more gooey goodness!
