Scrumptious Frosted Fudgy Brownies
Unfortunately I baked mine for 35 minutes, but it was too long for my oven, so the edges were a little overdone. But nonetheless, the center of the pan is amazing! I followed the directions for the frosting, except cutting back on the sugar because I used semi-sweet chips instead of unsweetened blocks. My frosting was very runny though, despite letting the sugar/cream simmer until it bubbled. Any tips on how to get the frosting to thicken up?

Zucchini Herb Casserole
Very tasty! Used long grain wild rice instead of white and would recommend cutting back on the cheese a little to make it healthier. Great way to use up some summer veggies!

Jennifer's Thai Curried Peanut Soup
Fabulous recipe! I followed it almost exactly, with just a few changes for health purposes, and it was great. Nutrition info for this is very high in sodium, fat, and cholesterol, but I use reduced sodium chicken bouillon and light coconut milk, as well as Smart Balance as opposed to butter. Easy ways to make this soup healthier without cutting out on taste. Will definitely be making this recipe again!
