Janine's Best Banana Bread

Reviewed: Jul. 17, 2010
Great basic recipe. I doubled and made the following adjustments: used 9 smallish bananas, 1 c white and 1 c brown sugar, 1 tsp vanilla, approx 1 1/2 Tbsp real maple syrup, dollup of sour cream. One hr bake time was just about right for my oven, although i decreased to 315 after 45 min. Thanks!

Raspberry Mint Cooler

very nice treat. i used mixed berries for the fruit. next time i will thaw them beforehand a bit in order to help during mashing, though. i used about a cup less water to make it more fruity and cut back on the sugar too. add a bit of vodka if it's adults, but everyone will enjoy this refreshing drink as it is.

Easy Morning Glory Muffins

great base recipe that makes it easy to use any sort of fruit or veggies you have on hand (mix 'n match zucchini, carrots, apples, rhubarb, dried cranberries, raisins, cherries, etc). chopping takes a bit of time, but it's worth it. applesauce easily takes the place of all the oil as suggested. it's also easy to sneak in some extra healthfulness with some ground flax seed, etc.
