Recently engaged, born in Canada moved to Scotland in May 2007 to be with my hubby to be. After doing a year long baking and pastry arts course, i decided professional baking was not my apptitude, so I just stick to home baking and cooking. I work in a local cinema, and I hope to start my own business of running a bed and breakfast one day.
My favorite things to cook
Stews, soups, cakes, my new best friend is the George Foreman grill. Great for low fat meat and burgers.
My favorite family cooking traditions
We do a mean Canada Day BBQ, homemade burgers( beef and turkey), hotdogs, coleslaw, potato/pasta/caesar salads, chips and dip, and strawberry shortcake for the dessert. Then we all go down to the park to watch fireworks.
My cooking triumphs
I made my mom and dad a dinner of pork glazed with a lemon and maple syrup sauce, garlic roasted potatoes and green beans. Then a made from scratch lemon merengue pie for dessert.
My cooking tragedies
Made scalloped potatoes for a romantic Christmas day dinner. I made the layers too thick and after an hour of baking, the potatoes were still raw, while the cheese topping was burnt to a crisp. But the ham I did more than made up for it.

Chicken Biscuit Potpie
Both hubby and I loved this, so comforting. I added some grated cheese to the topping and used cream of celery soup, turned out creamy and packed with flavour. A keeper for sure.

Clarke Cheesecake Pie
This was so simple and so delicious. I love no bake desserts. Made this for Christmas and I am making it once more as a request for my husbands birthday. I liked the idea of folding in some whipped cream. Also I covered the top in some white chocolate shavings and little christmassy sprinkles.Looked so snowy and pretty. Needless to say there were no leftovers. But works as a spring dessert as well. Leave off the chocolate and sprinkles and simply place a few curly strips of lemon rind on top.
