About this Cook
I'm a reformed vegetarian. I used to add eggs and cheese to my diet but have decided that if I'm going to be really committed to vegetarianism, then I need to be a vegan. It's a lot tougher then I thought it would be, most vegetarian meals use eggs and/or cheese so it's an adventure to replace them with substitutions and taste what happens.
My favorite things to cook
I love to cook Mexican food. My favorite thing to make is green TVP enchiladas. My best friend gave me the recipe using chicken but I started using TVP and they come out wonderfully!
My favorite family cooking traditions
My children and I love to make pumpkin bars. We always make them when the pumpkins are harvested.
My cooking triumphs
I baked and frosted a cake with a barbie in it. My daughter absolutely loved it, of course she was only three years old.
My cooking tragedies
I was 15 and my mother left me in charge of making a meatloaf which I mixed and put in the oven at 350. Shortly afterward we started smelling smoke and when I opened the oven door smoke started billowing out and I could see a small grease fire. I had to call the fire department, they came out and the fire was no more.

Chiles Rellenos (Stuffed Peppers)
I liked these and my daughter loved them but I don't think I'm very good at making them. They were too greasy for me, probably didn't heat the oil hot enough, which made them difficult enjoy. I think next time I'll make them in a casserole so not only will they be easier for me to make but also not so greasy.

Slow Cooker Pulled Pork
Never made pulled pork in my life but have always ordered it in my favorite barbecue restaurant. I've been on a try and make it myself kick and decided this would be a great recipe to try and it absolutely was! I made it exactly as it stated in the recipe but added honey to the top of the pork when I put it in the slow cooker. My kids loved it! We ate it with a coleslaw recipe I found here and it was delicious. I will be making this again and again. I love using the slow cooker, I can always make lots and have leftovers, which by the was were just as good as the first serving. I may try freezing some to see how it holds up.
