I had to cut the sodium in the house so without salt, I gave these a try. Wow! Really good!! They're just as easy to make as baked and much more flavorful! Definite keeper!

Heavenly Chocolate Mousse

Reviewed: Oct. 21, 2009
This is the recipe I use to make chocolate mousse cake filling. So quick and easy and it comes out perfect. I added coffee the last time and it really did enhance the flavor of the chocolate nicely. It tasted alot like chocolate ice cream. This is a definite keeper

Cucumber Sandwiches III

Mmmm Mmmmm DELISH!!! My daughter wanted to make a ranch cream cheese mix for them so we did both, but the Italian Dressing one turned out much tastier. my sister didn't care for dill so I made one batch with the other without and she liked the dill ones better. So the recipe untouched is what I use now. Thanks Kimbee100!

These were good. I don't care for the taste of beer so I cooked these in the crockpot for a long time.

Pumpkin Cake II

Reviewed: Oct. 21, 2009
I made this cake for my daughter's baby shower. Everyone loved it!! My 3 year old Grandson had 2 pieces! I also cut down on the oil by using half oil half applesauce and cut the sugar a bit too. Instead of icing the cake with the traditional cream cheese, I iced it with whipped cream. Just like pumpkin pie! There wasn't any left!

Grandma's Tomato Soup

Reviewed: Oct. 9, 2009
I used Rold Gold Vegetable juice. I'm looking to cut down on sodium and fat so I cut the butter in half and didn't use salt. I left everything else the same. The soup turned out good and think, just right for the family. Everyone loved it. It's a definite keeper! Thanks Gerri! :)

Marshmallow Fondant

Reviewed: Sep. 30, 2009
This is fantastically easy to make! I haven't ready all the reviews but what I do is take the melted mixture and transfer it into a mixing bowl. I use the dough paddle and let the mixer do the kneading while adding the sugar. Once it forms into a ball, I knead by hand for a couple of minutes and then wrap and refrigerate. When rolling the fondant out, I greased my surface with shortening rather than dust with sugar.

Mexican Baked Fish

This is really good! Nice, easy and economical. I used pollock for a milder fish and it came out moist and tasty. I'm not a big fish eater but was looking for some good baking recipes and this is a definite one. This will be at the top of my fish menu from now on!

Pretty Chicken Marinade

Reviewed: Jun. 19, 2009
This is seriously good!!! I didn't have olive oil on hand so I subbed in canola and used the juice of a fresh lemon. I halved the recipe as I was marinating a small whole chicken for the rotisserie. I did marinate for the 4 hours as suggested and cooked according to the rotisserie directions. It was FABULOUS!!! The liquid smoke gave it a nice outdoors flavor. This will be a regular chicken marinade from now on. Can't wait to try it on the grill!!! MMMmmmmmmm!

Chocolate Earthquake Cake II

Reviewed: Sep. 21, 2008
I have made this cake several times and it turns out fantastic each time. It will appear uncooked after the baking time because of the cream chees mixture. It's suppossed to be that way. Take it out and cool completely. It's flavor is best when served the following day. I refrigerate the cake overnight.

Scottley's Basic Yellow Cake

Reviewed: Jul. 28, 2008
This is the best scratch yellow cake recipe I have found so far! I gave it a try despite seeing some poor reviews and was pleasantly surprised. I'm a cake decorator always looking to improve on the cakes I make, and this recipe is my new found winner. I was not disappointed, especially when my customers compliment the cake. I would suggest for the ones who gave this a poor review to give the recipe another try.

Stuffed Peppers with Creole Sauce

Reviewed: Jan. 30, 2008
The chili flavoring overtook the rest of the ingredients. Next time I'll use less. I wanted more tomato taste to it. Also the green peppers didn't soften in the micro at 45 seconds, this needs to be adjusted to your own microwave.

Golden Rum Cake

Reviewed: Dec. 25, 2007
Oh this is definitely good cake!!! I'm not a fan of rum at all but gave it a try. I let it sit a couple of days for all the alcohol to evaporate and was it ever MMM-MMM good!!! I took Tahna's advice on soaking the cake rather than basting and it was all so easy. I let the cake sit at room temperature. It is a moist and flavorful cake! Definitely a regular from now on! Thanks Jackie! =:)
