Bob's Mexican Stuffed Chicken

Made this for dinner last night & it was wonderful. I used plain bread crumbs because that is what I had. You can really alter the stuffing to your taste. I used finely diced green pepper, red pepper & sweet onion. Also added chopped fresh celantro & a mexican blend of packaged grated cheese. I heaped on the pepper and onion mixture & skipped the salsa. It really had enough mexican flare with the fahita seasoning & chili powder. At the end, I sprinkled more celantro on top of the chicken, then the rest of the grated cheese before putting back in oven for last few minutes. This was really wonderful. I served salsa on the side for those who might want it. I did not put salsa on mine and thought it was very very good. Served with Spanish rice.

Pumpkin Bread IV

Excellent moist bread, especially when made a day ahead and refridgerated. Took to church coffee hour and was asked by quite a few people for the recipe. Did have to bake a little longer than the recommended time. Will definately make again.

Banana Banana Bread

This is the banana bread recipe that I keep coming back to. Wonderful banana flavor. I always add 1 tsp each of cinnamon & vanilla. I like to sift the flour because I find it mixes with the wet ingredients better that way. As with all quick breads, you want to only stir the wet & dry ingrdients until they are incorporated. Don't stir too hard, or too long. You will get tough bread with tunnels in it.

Beth's Orange Cookies

Made these for church. Everybody loved them. They are a very cake like cookie. I agree with another reviewer who said you cannot add to much grated orange rind to the dough. I did have to double to frosting recipe as it was not enough to frost the massive amount of cookies this recipe makes.

Caramel Bars

These are really good and very rich. They really are like eating candy. Read the reviews and then doubled everything except the caramels (I used 50 caramels), baked in a 9 x 13 pan. Also, I used pecans instead of walnuts because that is what I had on-hand. Took to church function. People begged me for the recipe.

Cream Cheese Frosting II

Italian Confetti Pasta Salad

I have been making this salad for several years now I can't believe that I have not done a review on it. This salad is wonderful. Great for picnics and potlucks. I know that the dressing sounds like a lot, but don't cut back on it. This salad really does need to sit in the fridge overnight before it is served. The pasta absorbs a lot of the dressing and the flavors really marry when the salad is prepared and well chilled ahead of time. Use whatever vegies you have on hand. Seeded Roma tomatoes are great in the salad and they hold up well. I usually double the amount of fresh basil the recipe calls for. Always get absolute rave reviews whenever I make this salad.

Roasted Asparagus with Herbes de Provence

A wonderful and easy way to make asparagus. This cooking method turns out perfect every time. I've made this with the herbes de provence (which is very good), or sometimes I leave that off and then sprinkle the asparagus with either balasamic vinegar or lemon juice just after it comes out of the oven.

Lemon Bars II

Buttery, lemony and wonderful! Served these at father's day brunch and was a big hit. After reading other reviews, I did use 2/3 of the crust-crumb mixture on the bottom and 1/3 on top. That seemed just right. The crumb mixture does still cover the entire top (unlike some other types of crumb toppings that are just a sprinkling on top). Personally, I thought this made them easier to cut and not so gooey to handle. Will make these again.

Blueberry Gelatin Salad

This was pretty good. I followed the recipe exactly, but for me, the cream cheese/sour cream topping did not set up and was real soupy. I think that next time I will either add a packet of Knox gelatin, or maybe even a 3 oz packet of grape jello to the topping.

My Country Style Steak

My family & I really enjoyed this. Serve it with homemade mashed potatoes for a wonderful comfort meal. My family likes lots of gravy so I stretched out the amount of gravy a bit by using a can of beef broth and then adding 1 1/2 cups of water. Also, I put the salt, pepper and garlic powder(not garlic salt) directly on the meat before dredging it in the flour. The gravy does not need the extra seasoning.

Spinach-And-Berries Salad With Non-Fat Curry Dressing

Love this salad & have made it a number of times. Try making it a main dish by adding some diced cooked chicken breast and penne pasta (wonderful!!). Also,I have found that red grapes are a good substitute for the blueberries as they can get expensive.

Banana Crumb Muffins
