Fluffy Pancakes

I didn't know pancakes could be this fluffy! =) I doubled the sugar, added cinnamon, ground cloves and some nutmeg. My one yr old and I devoured our special little treat with butter and syrup!!

Too Much Chocolate Cake

Not impressed. It tasted like a chocolate muffin you'd buy in the bakery of the grocery store! It was moist and looked beautiful, but with this many 5 stars I guess I was expecting a whole lot more. I will not make this again.

Mexican Casserole

Ok at first I said 4 stars. But I made it again 2 days later for a dinner with friends (and because my husband and I were craving it). The casserole was gone before I got my fill and I got so many compliments on this EXTREMELY easy and quick recipe. Don't change a thing and you will be happy with the results!

Best Marinara Sauce Yet

OMG this was so good. I can't believe I made this!!! =) This is rich, true Italian marinara and it isn't any more good than this. Don't mess with this perfect recipe. It is so great as is.

Spaghetti Carbonara II

I was so scared to make this. I had never even heard of spaghetti carbonara but it sounded way too fancy for me to handle! =) I made this for my husband, brother and mother in law and everyone RAVED what an amazing cook I have become!! I followed the recipe exactly- and I think its the fresh ingredients that really deserve the credit. Freshly grated parmesan, minced garlic, fresh italian parsley, some dry white wine... what's not to love? Plus this was SO incredibly quick to make. Loved it, love it!!!

Brunch Egg Bake

I gotta say that I was pretty impressed. I halved the recipe and wish I wouldn't have! Even my toddler enjoyed it! I omitted the mushrooms, used pepper jack and sharp cheddar cheese and enjoyed this quiche-like dish without the crust!

Best Ever Muffins

THANK YOU THANK YOU THANK YOU!!! I can FINALLY make a muffin to be proud of! I added some fruit - the raspberry, blueberry and marionberry fozen berries from Costco... Oh my oh my these are sooo good. I only made 9 so they were nice and big, and took the advice of one reviewer who recommended preheating to 425 and then turning it down when you put them in. Perfect.

Apple Crisp II

FINALLY!! This is the one! The best apple crisp I have ever had... and I can make it! I used Granny Smith apples & followed the recipe exactly with the exception of adding 1/2 tsp ground cloves to the apples. Makes me miss my grandma!!!

Slow Cooker Chicken Taco Soup

OMG!!! I would rate this 10 STARS if I could. I had never made soup before, but this seemed easy. I wasn't expecting it to be too amazing, but WOW it just knocked my socks off. I used hot taco seasoning cuz its all I had and used Corona beer. Wouldn't change a thing. And oh, the cheese and sour cream on top... mmm... SO GOOD!

Grandmother's Buttermilk Cornbread

I have made this both the standard way and then also "spiced up" with chopped jalapenos and lots of cheddar and pepper jack shredded cheese mixed in!! It adds a wonderful twist that will be sure to please the men in your house!

Salsa Chicken

I used Pace Picante Medium Salsa (cuz we get the big jug from Costco!) and I used "Hot" taco seasoning. I thought the flavor was perfect. I put all the ingredients in a crock pot and the chicken was oh so moist and juicy! The only thing I would change next time... is I think it would be better used for a burrito filling.

Bacon Ranch Pasta Salad

I used 2 tbls of regular ranch mix and 1 tbls of "Fiesta Ranch" dip mix by Hidden Valley. It added a fantastic kick and I think I will use even more next time!! I didn't think this recipe could get any better... and I love that I can enjoy a pasta salad that doesn't take like italian dressing.

Oatmeal Peanut Butter Cookies III

Are you ready for the BEST COOKIES YOU HAVE EVER HAD??? I wish I could give these more stars!! They are amazing- and I'm not even a huge peanut butter cookie fan. You have to make the filling! (And I used non fat milk instead of whipping cream cuz that's what I had). Also, I think you should only cook them for 8-9 min, let them cool on the pan for a few minutes and then move to completely cool on a wire rack before attempting the fillng. I made these last night and they are almost all gone this morning- I've had 2 for breakfast! Shhh.. don't tell:)I just can't resist!!!!

Chocolate Waffle Cookies

These are my husband's favorite cookies. I looked all over for a recipe but this one is close to it. I used cake flour instead of regular flour, but to make these cookies amazing you have to have frosting instead of just sugar frosted on top. I make a chocolate glaze, drizzle it on top and then add sprinkles. The cookies are much cuter and tastier- and my husband ate the entire batch!
