Banana Banana Bread

YUM! I really liked this recipe as a base, but I too added some stuff (cinnamon and nutmeg). I wasn't sure how many bananas 2 1/3 cups is, so I used 3 bananas. I also just mixed the wet ingredients then the dry instead of creaming the butter and sugar first. It was a good idea to put some brown sugar on top to get the crunchy top and I sprinkled some more cinnamon on too. About an hour or 55 mins at 325 worked for me.

Curried Coconut Chicken

Yum. I liked it even better reheated. I would say that the taste was good but not very strong. We added a little red pepper but next time we'll use more curry and pepper to give it some zip. I drained my tomatoes and used lite coconut milk. I cut up a zuchini, red bell pepper and 2 carrots and threw them in the pan as everything was simmering. Served over rice and it was good.

Zippy Summer Shrimp

SO easy. I used the frozen cooked shrimp to make it even easier. I thawed them and removed the tails then heated them up in the saute pan with red pepper flakes, cayenne pepper, salt, olive oil, garlic and lemon juice. Really good with some veggies and rice.

BBQ Pork for Sandwiches

Wow. The easiest and the best recipe (for anything) I've found in a LONG time. I used some sort of cheap big cut of pork and a bottle of sauce and it was DELICIOUS. My husband asks for it all of the time.

Crispy Rosemary Chicken and Fries

I normally don't eat chicken thighs but they are so cheap these days. This was good and super easy. I marinated the chicken for about an hour before baking. I also put some of the spices under the skin . It came out very moist and yummy. Will try again.

Make Ahead French Toast

The idea was great but the finished product wasn't as good as I'd hoped. It was soggy and the topping was hard to spread/ drizzle evenly. I also had problems with it sticking to the buttered AND sprayed dish. To avoid the sogginess I will make sure there is only one layer of bread next time and flip halfway, and I think I'll use non stick cookie sheets instead of the glass casserole dish. **I toasted the leftovers in the toaster oven the next day and they were even better. Will try again.

Whipped Shortbread Cookies

These are super easy to make- I used my stand mixer. I did not use any cherries but I put sprinkles on them. They are ok cookies, but nothing spectacular. Very interesting texture though; light and airy!

Waffles II

I was excited to make these waffles after all the great reviews, but they really were bland. They may have been big and poofy but even after adding cinnamon, sugar, vanilla, and even a dash of nutmeg I felt that they weren't as yummy as they could have been. Maybe it was my waffle maker. I bet this would be a better recipe for thin waffles instead of thick Belgian style ones.

Grilled Eggplant, Tomato and Goat Cheese

These were really good! I soaked the eggplant for a couple of hours in the olive oil and balsamic and stuck it in the fridge which made the taste great. Be careful when grilling them- we tried to use foil so they wouldn't burn on our hot fire but some of them stuck to the grill. They still tasted good though!

Pork Chops for the Slow Cooker

This was great! I cooked it for about 5- 5 1/2 hours on low. It really was tender and fell apart. YUM! Following other recommendations, I added some honey and cut down the soy sauce. I also added some sliced mushrooms an hour before it was finished- I might saute them first next time. I served it over some steamed rice and am happy to have leftovers!

Catherine's Spicy Chicken Soup

This was so awesome! The chicken was so tender and yummy I'd make it any day of the week. I only used one big can of diced tomatoes and 1/2 of a container of sour cream and it was great. Thanks Catherine!

Tangy Grilled Pork Tenderloin

The recipe was OK, but I really didn't taste anything special eventhough I marinated the pork for 8 hours. It was really juicy though!
