I used cashew nuts instead of pistachios. The rolls did flatten out into two large cookies, but I cut them into fingers and toasted them. They were delicious, and my Italian cousin asked for the recipe! She said it was fine if the dough flattens out somewhat. Everyone loved these, and I will make them often.
