Oatmeal Pancakes
Just the recipe I was looking for- I had oatmeal pancakes at a cafe near by and they were delicious- the texture of these pancakes exactly resembles what I had there. I did not have buttermilk on hand- I mixed 2% with 1.5 tablespoons of cider vinegar and added a bit extra flour to thicken it up- if you use whole milk- you probably won't need to add extra flour - the thinner milks make for a thinner "buttermilk" if you are adding acids. Additionally- I used 2 tbls of grape seed oil in place of the butter.

Coconut Cake III
I did not follow the recipe exactly- and perhaps should not rate this- but it was DELICIOUS! Minimal changes I made- I used coconut flavored instant pudding along with a dark chocolate cake mix. The toasted coconut gave the overall flavor such a unique taste and texture- for all coconut lovers- this recipe is divine. I made this for my significant other for his birthday and he loved it (coconut fiend).

Thai Green Curry Chicken
Quite good- the green curry I used is by the label called "Maesri" and I used about 1 1/2 tbls as opposed to two- it is quite "hot". I used one can of coconut milk, reduced the sugar to 1 tbls and added a chopped green pepper. Yes- I altered the recipe- but had I followed it exactly- I know it would have been too sweet- that's the reason for a 4 star- but it's all personal taste. I served it with Thai sticky rice and steamed broccoli--Easy and quick to make.
