About this Cook
I have been a pescatarian for 10 years, which means that I am vegetarian, except for eating FISH and seafood. I cook for 2 most of the time and like healthy, easy, economical dishes that don't require obscure ingredients or complicated machinery. I like to cook with seasonal fruits and vegetables from the local farmer's market that I go to every Saturday. I go camping a lot and do lots of campfire cooking with freshly caught fish and local produce.
My favorite things to cook
I love to cook from the earth and the cupboard. I don't like recipes that require any fancy equipment like food processors or pasta machines. I enjoy economical food like those prepared with dried lentils, canned chickpeas, etc. I like low saturated fat foods for desserts and snacking.
My favorite family cooking traditions
I like to eat and cook locally grown foods with a splash of character. I use a lot of spices, but avoid overly-pungent flavors.

Easy Vegan Peanut Butter Fudge
I made these with regular margarine and natural crunchy PB and they turned out great. I had to give them away as gifts because I couldn't stop eating them! Note: light PB has much more sugar than regular so use full fat or natural PB.

Oatmeal Chocolate Chip Muffins
I made these for my Valentine this morning. He loved them with his coffee! I thought it was a bit too salty, so I might cut back to 3/4 of the salt next time. I omitted the pecans and they still tasted great. And I did a WW flour and plain flour combination that yielded a healthier tasting muffin. I didn't have applesauce, but if I did, I would have omitted some of the oil and used applesauce to cut down on fat. Overall- quick and easy recipe that I will make again!
