Slow Cooker Chicken and Dumplings
This has become a family staple. I first followed the recipe, but have since adjusted to my family's taste. I add seasonings, sometimes use onion soup mix instead of chopped onion, and add in baby carrots and potatoes. I also season the biscuits with a little salt and pepper, flatten, and cut into pieces. I use one can of biscuits, serve everyone, and then add in the other can with a bit more cream of chicken and water. This helps the biscuits cook better and nothing overflows (since I put veggies in)! While my hubby likes traditional chicken and dumplings, he finds the addition of veggies more filling. He loves this so much he told his mother she needed to get my recipe instead of making her traditional Tennessee recipe. My two year old and six year old boys also love this; it's very kid-friendly. Great for busy workdays...in fact we have open-house this week and are looking forward to having a warm dinner waiting for us at home.
