Janet's Rich Banana Bread
This is darn fine banana bread. I did mash the bananas and made sure I had a cup's worth, but I followed the recipe to the letter other than that - YUM! I will probably add about 1/4 cup more flour next time because I like a little more cake-like feel. But..the flavor is awesome as is. My husband wanted some, but he is doing the P-90X plan and I made him a loaf using whole wheat flour (same amount, sifted), Splenda for baking, Egg Beaters, and I Can't Believe It's not Butter sticks. Tasted almost the same and same moisture, but oodles less fat and calories. Either way, this is awesome. Keeping this one!!
