Chocolate-Covered OREO Cookie Cake

This was a hit with our youth group! I made it for a girl's 18th birthday and everyone loved it. I added one box of chocolate pudding mix to the cake mix and it made it extraordinarily moist. Also, make sure the filling is very cold before you put it on the cake or else it will spill over. I actually put mine in the freezer before putting the chocolate topping on it and it worked well.

Scottish Shortbread IV

These always get great reviews from the people I make it for. However, I have one IMPORTANT suggestion to everyone - add about 1/4-1/2 tsp. of salt to the recipe. Salt is essential in bringing out flavor, not just in this recipe, but every recipe. It doesn't make it taste salty, it just makes it possible to taste the butter and sugary goodness. Good luck!

Basil Shrimp

Reduce the brown mustard, but most of all... Don't marinade for a whole hour! Shrimp (and all seafood for that matter) actually starts to cook when it sits in citrus juice. It doesn't need marinading more than 15-20 minutes!! Otherwise you will end up with tough, chewy shrimp.

Blueberry Sour Cream Coffee Cake

Oh my goodness, this was amazing! I only made very slight alterations, but this was one of the best "cakes" I've ever made. I did not include any pecans b/c I'm allergic to nuts, I added a little less butter and white sugar, and almost doubled the blueberries. I should have let it cook another 5 minutes, but it was so moist and delicious it didn't matter! I made it for brunch with my friends and even one who doesn't like blueberries loved this! The best part was the crunchy cinnamon/brown sugar, so make sure to swirl well. Delicious!

Rhubarb and Strawberry Pie

It was delicious! I used a very simple crust recipe and followed the recipe pretty much to a T. only difference is I put in about 1/4 c. of brown sugar instead of white and I added some corn starch. Next time I will add more, b/c it was VERRRY juicy. I might also cook the bottom crust a little bit before putting in the filling. Everyone raved about it. Thanks!

Roasted Chicken with Risotto and Caramelized Onions

This had a very good taste! I added mushrooms and let them and the onions sit in the vinegar on low while the risotto finished and I think it let the flavor soak in a bit more. I also didn't have roasted chicken, so I baked 2 breasts w/garlic salt, thyme, pepper and salt and then added them in at the end. I made it with asparagus with balsalmic butter sauce and it was wonderful!

Grecian Chicken

Very good! I didn't have Greek seasoning, so I made up my own from a combination of oregano, dill, garlic salt, rosemary and thyme... all to equal around 1 tbsp. I added some fresh lemon and didn't flour the chicken, but it still turned out great! My roommates loved it.
