I enjoy cooking but have challenges due to weakness due to a stroke. I am always looking for something that I can't spill easily or recipes that have few ingredients. I still enjoy cooking but thank goodness I have a husband who is willing to clean up after me.

I have been raised in Texas so southern style is dominant in my family. We also make many Tex-Mex dishes.

Black Olive Spread
I love this recipe but I too added a brick of cream cheese and green onions to make it a thicker spread. I spread on flour tortillas and stacked into three layers. I cut into triangles and they make a great appetizer or party food.

Texas Sheet Cake III
I have made this cake twice. The first time, I baked for specified time and it didn't get done but that is probably my oven. I increased the baking time and it was wonderful the second time. Very good and very rich.

Ground Beef Mexican Style
This recipe is easy and good and quick. I made it according to directions except for adding some salt and pepper to the ground beef when browning. My family liked it. I will make it again.
