I am a SAHM and a homeschooling mom. I have two children, both are boys. I am a military wife. I am very involved at my church. You already know one passion of mine is food, I also love reading the Bible, doing pilates, singing in my mini van, and writing in my journal.
My favorite things to cook
I really enjoy making different chicken dishes. I cannot eat beef and pork, so I have to get creative with poultry. I don't enjoy fish. So I am very challenged to make new chicken and turkey dishes. I also love vegetarian meals. Usual dishes in my house are: turkey chili, minestrone soup, pasta dishes, couscous, and elaborate green salads.
My favorite family cooking traditions
My Mom has passed down a few yummy ones to me. One is our chicken salad. She got that my Great Aunt. We also make a killer potato salad. My son's favorite is our baked mac n' cheese.
My cooking triumphs
Ok, I would say my latest cooking triumph was the strawberry short cake that I made from scratch. I was so nervous to make it. I never made it before. I used one of the recipes from this site. My whole family loved it!
My cooking tragedies
I don't know why, but I never do well with dried beans. In fact I just attempted a new soup the other day, and while the flavor was wonderful, the beans just wouldn't cook. The beans always stay firm.

Sausage Mushroom Quiche
This had a really great flavor. I used soy creamer instead of half & half. I also used chicken sausage, baby bella mushrooms,dried parsley,a whole wheat frozen pie crust, and 2% mozzerella cheese. I sauteed the mushrooms in olive oil and garlic powder before putting them in the egg mixture. Next time I will bake the crust first as some suggested. That should probably be done with all quiches to prevent sogginess.

After-Thanksgiving Turkey Soup
I hate dark meat, but I didn't want to throw it away from the Thanksgiving turkey. My mom-in-law lives with us, and she loves dark meat. So I decided to make some turkey soup, even though I never had done so before. I tasted it, and it's actually really good. The half and half helped me a lot. I lvoe creamy soup. I used cornstarch instead of flour, and I probably only used about 1/2 cup or a little less. I also sauteed 2 tsps of minced garlic with the vegetables. Instead of salt I used garlic salt, and I added parsely flakes. I also used organic brown basmati rice. Thanks for the recipe!!!

Turkey Shepherd's Pie
Thank you for listing this. I basically looked at this recipe to see how long it should be baked. My ingredients were quite a bit different because I wanted to make a shepherds pie to use up left overs from Thanksgiving dinner. I figured cooking times shouldn't be too different though. I'll list the ingredients so people have ideas on what they could throw in their own. I used the homemade whole wheat stuffing for a bottom crust, I just pushed it all down into the bottom. Then I put a little shredded cheddar on top of it. Next I put shredded white turkey meat. On top of that I used the rest of our homemade turkey gravy. Then I put most of the left over broccoli casserole. On top of that more shredded cheddar cheese. The final layer were the homemade mashed potatoes. I then sprinkled more cheese on top of the potatoes. I assembled in a Pampered Chef deep dish stone pie plate. It tasted fantastic!
