About this Cook
I have two precious children, Danielle and Christopher. My children are 9 and 3 and keep me happily busy. My family has a history with food (my dad, grandparents, uncles, and great uncles all owned restaurants)...Maybe one day I will, too.
My favorite things to cook
Meat sauce and marinara sauce. I should submit my meat sauce recipe...but, I'm like Rachel Ray where I "eyeball" everything and just haven't written it down...I should, though!!
My favorite family cooking traditions
My grandma passed down her homemade macaroni and cheese recipe to me. She taught me how to make it just before she passed away, and now everyone wants me to make "Gramma's macaroni" because I'm the only one who knows how to make it. I'm so glad she and I were able to do that together!!! What a great memory for me.
My cooking triumphs
Created my own recipe for spicy curried pork loin with coconut milk. I LOVE IT :) My dad, who's a fantastic cook, really liked it, too.
My cooking tragedies
Souffles...they're impossible. I'm also a horrible baker. I use boxed cake mix and boxed brownie mix whenever possible. I've been known to clog some garbage disposals, as well.

Caramels
This is the ONLY recipe I will ever use again. I followed it to the "gnat's eyebrow" (except I used parchment paper....so maybe the gnat's forehead) and it is PERFECTION!!!!!!!!! After 2 failed attempts at caramel from other recipes, I found this one and it is fantastic! 1. MUST have a candy thermometer that is calibrated correctly! 2. Use parchment paper. 3. Give these away as gifts because YOU CANNOT STOP EATING THEM!! Barbara, thank you, thank you, thank you!! I needed to make caramel for a fundraiser and you saved me from disaster :)

Salsa Chicken Rice Casserole
This is a decent base recipe. I made several of the changes that others mentioned in their review, too numerous to list here. Some people said too much rice, others said too little. I thought it was just the right amount. The clean up was killer! Too many bowls.

Classic Macaroni Salad
A little too sweet for my taste when I made the recipe as is. Next time I cut the sugar back to 1/2 cup and added tons of fresh veggies. I will make it again for sure! The kids loved it!!
