Italian Wedding Soup I
Wonderful! I always make wedding soup from scratch.( boil chicken to make broth with onion carrots,celery and tomato's.) My daughter had the flu and my Grandmother always had soup in the freezer for when you were sick she called Italian Peniciliin. So in a hurry I used this recipe. Loved it. The only changes I made was I doubled the meatballs because its the kids favorite part. I did add the beef broth and I added more escarole. Threw some left over chicken I had in the fridge. Added garlic to the meatballs and put the meatballs in a preheated 350 oven for 10 min. to get the greese off. Thanks so much for the " Italian Penicillin ;)
