Beer Margaritas
We loved these. I was looking for a margarita recipe that did not have Cointreau in it as it was $40 a bottle and I didn't want to spend that much. I wasn't sure about the beer but now I will never make them another way. I did make two changes. I measured 3/4 of a limeaide can full of tequila (9 oz) and filled the can the rest of the way with triple sec (3 oz) and I used 2 ice cold bottles of Corona Light. I also threw in some thin fresh lime slices. I let the pitcher set in the 'fridge for a little while so it got really cold. They were so good "on the rocks" with crushed ice. Careful...they go down way too fast and will sneak up on you. Good news...no tequila headache the next day!

Kiki's Mexican Chicken Salad
I used two ears of fresh corn, cut off the cob, instead of canned plus some extra carrots. jicima and peppers. We spooned it on to romaine lettuce leaves and topped with some shredded chipotle cheddar cheese and some black olives. My son ate his with tortilla chips. It was so good; there were no leftovers!

Mock Tuna Salad
I'm not a vegetarian but I love garbanzo beans and I eat them all the time. Since I found this recipe I have been making this just like my tuna salad with mayo, celery, onion, a bit of relish, a squeeze of lemon, a little dry mustard, onion powder, salt and fresh ground pepper. It tastes even better if it sits overnight in the 'fridge. Today, I had some leftover chopped boiled eggs and I added those too...oh boy, is this good!! Thanks so much for the idea.
